KATLESI ZA SAMAKI(FISH CUTLETS)



MAHITAJI/INGREDIENTS
1.Viazi mbatata nusu(Vyenye Ngozi Ya Brown)
 1/2 Kg Potatoes(Russets)

2.Samaki 4(Vibua)
 4 Fish(Razor Bellies fish)

3.Mafuta ya kupikia litre 1
 1 Litre Cooking Oil

4.Mayai 4
 4 Eggs

5.Keroti Kubwa 1
 1 Large Carrots

6.Ndimu 4
 4 Lemon

7.Kitunguu thomu punje kubwa 6
 6 Garlic Cloves

8.Chumvi kiasi
 Salt to taste

9.Tangawizi ndogo 1
 1 Small Ginger

10.Pilipili ya kuwasha 2
 2 Red Chillies

11.Paprika kijiko cha chakula 1
 1 Tbsp Paprika 

12.Unga wa mchele (Unga wa sembe au Bread crumbs)
 Rice Flour or Bread Crumbs

13.Maji
 Water 

14.Royco Paketi 1
 1 Packet Royco 

MAANDALIZI/PREPARATIONS
1.Osha Samaki muweke pembeni
 Wash the fishes well and put them in the cooking pot

2.Menya Viazi na vikate Kate weka pembeni acha na maji
 Peel the potatoes and cut into small pieces wash them,keep the pieces in another cooking pot with water

3.Osha vitu vilobakia
 Wash other ingredients remain

4.Menya Tangawizi na Kitunguu thomu kisha vitwange na pilipili usiweke Chumvi
 Peel the ginger and garlic cloves and mix with chillies then grind them together without salt

5. Vunja Mayai weka kwenye kibakuli na Chumvi kidogo yapige kama unataka kukaanga kisha weka pembeni
 Break the eggs in the bowl add salt then beat them

6. Chukua kibakuli na ukamue Ndimu na maji kidogo na ziweke pembeni
 In another separate bowl squeeze the lemon with little water and keep them aside

7.Para keroti yako weka pembeni
 Grate the carrots keep it aside

JINSI YA KUPIKA/HOW TO COOK
1. Chemsha Samaki wako na Chumvi na Ndimu pamoja na Royco hakikisha haumkaushi anabaki na maji maji
 Add the lemon juice,salt and royco in the pot of fishes and bring it to boil until cooked but leave the fishes with little amount of water

2. Chemsha Viazi mbatata na Chumvi kiasi acha vichemke kisha vikiiva mwaga maji na rudisha jikoni kwa dakika 1 ili viwe vikavu kisha epua
Bring to boil the pot of potatoes add salt and when they are ready drain them and take the pot back to the stove for some seconds let the potatoes dry completely

3. Mtoe Samaki miba chukua nyama yake iweke Pilipili ulioitwanga changanya vizuri kisha weka pembeni
 Remove the bones and pin bones of the boiled fish and take the fillet into the bowl add the chillies mixture and mix it well and keep it aside

4. Chukua mwiko wa ugali au chupa ponda ponda vile Viazi ulivyo vichemsha mpaka vilainike vyote
 Mash the boiled potatoes very well

5. Changanya Samaki,Viazi ulivyo viponda na keroti vizuri
 Mix the mashed potatoes with fish mixture and grated carrots by spatula or hands

6. Chukua donge la Viazi tengeza shape upendayo kisha nyunyizia Unga wa mchele kidogo juu ya katlesi zako
  Take small portion of mashed potatoes mixture then shape into any shape you desire keep into the plate then sprinkle the flour or bread crumbs on top

7. Weka mafuta jikon hakikisha yamekuwa ya moto sana chovya katlesi kwenye Mayai kisha weka kwenye karai
 Pour the oil into frying pan and let it heat to the maximum and insert the cutlets beaten eggs then put it in the frying pan

8. Acha kwa dakika 3 kisha zigeuze acha dakika kadhaa zikiwa na rangi ya dhahabu zitoe
 Leave them for 3 minutes then flip to let the other side to cook evenly when turn into golden brown  remove from the pan

9. Weka kwenye chujio au tissue zichuje mafuta zikipoa tayari kwa kula
 Remove from the pan to the sieve or tissue to get dried

10. Unaweza kula zenyewe au kwa chapati au na urojo
 You can serve with breads,urojo or as they are


Angalizo:Note;
1. Usiharakize kuzipika kabla mafuta hayajapata moto zitapasuka kwenye karai
         Do not hurry to insert them into the oil before is heated enough they will break in the frying pan
   
     2. Kaangia kwa Mayai ya kutosha ili zipendeze
          Use enough beaten eggs to be covered well and have better skin

        3. Usiwe na haraka ya kuzitoa jikoni acha ziive ndio uzigeuze au uzitoe
           Do not flip or remove from the frying pan if  they are not ready

       4.Ukikosa vibua tumia samaki wa vipande hasa nguru
        You can use King Fish instead of Razor Bellies Fish
     
       5.Tumia viazi mbatata vya brown huwa vikavu na rahisi kuviponda ponda
        Use Russets potatoes or Yukon Gold Potatoes since they are can be mashed easily

      6.Kupata ladha tamu na nzuri ya Katlesi ni vizuri kula zikiwa zimepoa
         Let the cutlets cool before you serve them
