4.Ukitoa chipsi anza kukaanga vitunguu maji mpaka viwe brown kiasi kisha vitoe,halafu kaanga keroti na uzitoe na malizia kukaanga pilipili boga na kisha zitoe

HOW TO COOK CHICKEN MAKANGE(MAKANGE YA KUKU)


MAHITAJI/INGREDIENTS
1.Kuku 1
 1 Whole Chicken

2.Mafuta lita 1
 1 Litre Cooking Oil

3.Tangawizi iliotwangwa(kusagwa) vijiko vikubwa 3
 3 Tbsp Mashed Ginger

4.Kitunguu thomu kilotwangwa(kusagwa) kijiko kikubwa 1
 1 Tbsp Mashed Garlic Cloves

5.Kitunguu maji kikubwa 1
 1 Large Onion

6.Karoti kubwa 1
 1 Large Carrot

7.Pilipili Hoho(Pilipili boga) kubwa 1
 1 Large Green Pepper

8.Ndimu 2
 2 Lemon

9.Chumvi vijiko vikubwa 3
 3 Tbsp Salt

10.Chicken Masala vijiko vikubwa 3
 3 Tbsp Chicken Masala

11.Nyanya ya paket kijiko kikubwa 1
 1 Tbsp Tomato Paste

MAANDALIZI/PREPARATIONS
1.Osha Kuku wako vizuri kisha mkate vipande upendavyo.
 Rinse the chicken well and slice into many pieces you want

2.Muweke viungo vyako kama tangawizi,thomu,ndimu 1 na kipande(kipande weka pembeni),chumvi vijiko 2,chicken masala vijiko 2 kisha mchanganye vizuri na muweke kwenye friji kwa masaa yasio pungua mawili.
 Marinate the chicken pieces by adding ginger,garlic cloves,1 and 1/2 squeezed lemon juice,2 tbsp salt,2 tbsp chicken masala mix them well and refrigerate for at-least 2 hours

3.Kata keroti,pilipili hoho na kitunguu maji kwa urefu au umbo upendalo ila viwe vipande vikubwa vinavyo onekana baada ya kuiva.
 Chop the carrot,onion and green pepper into long pieces

4.Para au saga nyanya na iweke kwenye kibakuli.
 Grate the tomato and keep it aside

JINSI YA KUPIKA/HOW TO COOK
1.Chukua karai mimina mafuta na yaache yapate moto wa wastani
 In the frying pan pour the oil and heat to the medium heat

2.Anza kumkaanga kuku taratibu mpaka aive.
 Add the chicken pieces and fry them well until done

3.Tumia karai lile lile punguza mafuta bakisha mafuta machache kwa ajili ya kukaanga viungo viliobakia.
 When they are done remove the pieces to the sieve and pour the oil in to another pot and leave little amount of oil in the frying pan just to use them to fry remain ingredients

4.Anza kukaanga kitunguu kisha weka pilipili hoho na malizia na keroti usikaange kwa muda mrefu havitakiwi kuiva sana.
 Add onion in frying pan then carrot and green pepper but  do not over frying them

5.Weka nyanya ulizopara koroga na malizia kwa kuweka chumvi,masala,nyanya ya paketi,pilipili na ile ndimu kipande iliobakia.
 Then add tomato stir the mixture than add salt,chicken masala,tomato paste,chilli and lemon juice

6.Mimina kuku wako na mkoroge kidogo ili aenee vile viungo kisha mtoe weka kwenye sahani
 Lastly add fried chicken pieces stir the mixture well then add the mixture to the plate

7.Inapendeza kula na chipsi,ndizi za kukaanga,ndizi za kuchoma,wali au chaopati.
 You can serve with chips,fried banana,backed banana,rice or breads.

Angalizo:Note;
1.Hakikisha unapikia kwenye karai.
 Make sure you use big frying pan in preparing this dish

2.Usiweke maji wala nyanya nyingi kwenye upishi wako.
 Do not add water or too much tomato

3.Rosti halitakiwi kuwa jingi itakua sio makange ni mchuzi sasa.
 Make sure the sauce is little and well covered by chicken

4..Kama huna kuku unaweza kupika kwa nyama ya ngo'mbe,mbuzi,samaki wa kukaanga n.k.
 You can use fried cow's fillet,fried goat's fillet,fried fish instead of chicken.

COOKING GREEN BANANA WITH CHICKEN (NDIZI KUKU ZA TUI LA NAZI)

1.Ndizi mbichi 12(Malindi)
 12 Green Banana

2.Kuku Nusu
 Half of Chicken in pieces

3.Nyanya kubwa(Tungule) 4
 4 Medium sized Tomatoes

4.Nazi moja kubwa
 1 Coconut (OR)coconut powder

5.Ndimu 1
 1 Lemon

6.Karoti 1
 1 Carrot

7.Pilipili Hoho(Pilipili boga)1
 1 Green Pepper

8.Kitunguu maji kikubwa 1
 1 Onion

9.Nyanya ya Paket vijiko vya chakula 2
 2 Tbsp of Tomato Paste

10.Royco(Sio lazima)
 Royco OR Any Masala(Optional)

11.Tangawizi na kitunguu thomu ilotwangwa kijiko cha chakula 1 
 Mixture of Garlic with Ginger

12.Vitunguu thomu punje 3 kwa ajili ya Mchuzi
  3 Garlic Cloves for blended tomato

13.Chumvi Kiasi
  Salt to taste

MAANDALIZI/PREPARATION
1.Osha viungo vyako vyote vinavyotakiwa kuoshwa
 Wash all ingredient if needed

2.Katakata Nyanya,Kitunguu maji,thomu,Pilipili hoho weka kwenye blenda na uvisage vyote
  Cut tomato,onion,green pepper,garlic and add them into jug then blend them

3.Loweka ndizi mbichi kwenye maji ili upunguze utomvu
  Soak the banana into big bowl 

4.Menya Ndizi zipare na kata kata kwa umbo unalolipenda
  Peel them and grate a little bit to remove upper layer of it then cut them to any size you prefer

5.Kuna nazi yako na ichuje
  Prepare the fresh coconut to get the coconut milk if you use Fresh Coconut instead of Coconut Powder

4.Weka tui zito na jepesi mbalimbali
 Separate heavy Coconut milk And light one during preparation

JINSI YA KUPIKA/HOW TO COOK
1.Chemsha kuku ulomuweka tangawizi kitunguu thomu na chumvi mpaka awive muache na supu kiasi
 Boil the chicken added mixture of garlic and ginger,with salt till cooked

2.Chukua sufuria nyengine chemsha ndizi na chumvi kiasi mpaka ziive kisha mwaga maji weka pembeni
   Use a separate Cooking Pot to Boil the banana added salt till cooked, then pour the remain water and leave the banana dry in the pot

3.Weka nyanya ulizozisaga kwenye nyama yako acha ziive
  Add the mixture of Tomato in your cooked chicken

5.Weka nyanya ya paketi na Royco
  Add tomato paste And Royco

6.Weka chumvi na ndimu acha kwa dakika 1 na uonje mchuzi wako kama hauja chapuka ongeza chumvi kidogo
 Add salt and lemon juice and taste it after 1 minutes,if its okay remove from the heat if  not Ok,add little salt in it

7.Weka tui jepesi kwenye ndizi na chumvi acha zichemke kwa dakika 5 usikoroge
 Add light coconut milk with salt in the pot that having banana and let them cooked for at least 5 minutes don't use spatula to mix it 

8.Kisha weka tui zito acha lichemke kwa dakika 3
 Then add the heavy coconut milk and leave it for 3 minutes

9.Weka mchuzi wako wa nyama acha kwa dakika 2 epua
 Add the mixture of Chicken with tomato you cooked before and leave it for 3 minutes

10.Acha zipoe kidogo pakua kwenye sahani tayari kwa kula
 Let them cool ready to serve

NB1.Hakikisha mchuzi unakua mzito mzito na mdogo
           Make sure the cooked mixture of chicken with tomato is too heavy 

       2. Pika ndizi zako kwa moto wa wastani ili zisigande kwenye sufuria
           Prepare your dish into medium heat

       3.Epuka kukoroga wakati wa kuzipika ndizi zako
         Don't mix it by using spatula during cooking this dish

       4.Kama utataka kukoroga chukua tambara safi shika sufuria yako itikise au chukua banio la ugali bana kwenye sufuria na uitikise
     If you want to mix use a clean towel and take your cooking pot and shake it a little bit

      5.Unaweza kupika kwa Samaki,Nyama,Dagaa pia ukipenda
       You can use Fish,Meat instead of Chicken

MAHITAJI/INGREDIENTS
1.Viazi mbatata vikubwa 10
 10 Medium size Potatoes

2.Mayai 2
 2 Eggs

3.Mafuta nusu lita
  1/2 Litre of cooking oil


4.Karoti 1
  1 Carrot

5.Pilipili Boga(Pilipili hoho) ndogo 1
  1 small size Green pepper

6.Kitunguu maji kidogo 1
  1 small sized Onion

7.Chumvi kijiko chai 1
  1 Tbsp of salt

8.Maji kiasi
   Water for washing ingredients


MAANDALIZI/PREPARATION
1.Menya viazi na uvikate vipande kama unavyokata chipsi za kawaida
  Peal the potatoes and slice as chips shape

2.Vioshe na uviweke kwenye maji
  Wash and leave your chips in water

4.Osha viungo vilobakia
 Wash other ingredients remain

5.Katakata vitunguu maji,pilipili boga weka pembeni
  Slice or chop the onion

6.Para karoti weka pembeni
 Grate Carrots and keep it a side

7.Vunja mayai weka chumvi kidogo na yapige pige kama unataka kuyakaanga ila yaweke kando
 Crack two eggs into a bowl or jug. Add one tablespoon of salt and beat them vigorously    

JINSI YAKUPIKA/HOW TO COOK
1.Weka mafuta kwenye karai yakipata moto vizuri zikaange chipsi mpaka ziive
 Pour oil in a cooking pan let them be heated well enough then start frying your chips till fried

2.Toa chipsi na uziweke kwenye kikaangio
 After fried well put them in a frying pan

3.Chukua frying pan ongeza mafuta kama vijiko 2 vya chakula
  Add 2 tablespoon of oil in frying pan and let it heated 

4.Kisha weka vitunguu kisha pilipili boga kisha karoti juu ya chipsi zako 
  Then Put Onion,Green pepper than carrots on top of the chips in the frying pan

5.Kisha mimina mayai ulio yaweka chumvi na kukoroga kwenye mchanganyiko wako
  Add beaten eggs added salt in it

6.Acha dakika 3 jikoni yai likipiga weupe geuza kwa kutumia sahani
 After 3 minutes take a plate and cover the pan then tun the pan upside down

7.Acha upande wa pili uive vizuri
  Let the other side cooked well

8.Mimina chipsi na zichanganye vizuri
 Add cooked chips and mix well with tomatoes

9.Malizia kwa kuweka yai na acha kwa dakika moja
 Finally pour your beaten eggs and wait for a minute

10.Ukiona yai linafanya weupe chukua sahani funika frying pan yako kisha geuza chini juu
  As the eggs start to turn into white cover your frying pan with a plate and turn upside down to let other side be cooked either

11.Ikiwa hupendi liwe na umaji maji wa yai liache mpaka likauke angalau dakika 4 kama unapenda liwe na umaji umaji acha kwa dakika 2 kisha epua
If you prefer the wet mixture leave it for 2 minute than remove it from a stove but if you want to get dried just leave it for at least 4 minutes

12.Weka sahanini na uimiminie tomato unaweza kula yenyewe au na mkate na kuongezea na salad
 You can serve with any salt bread by adding tomato ketchup with salad

1.Usipike chipsi kabla mafuta kupata moto vizuri
 Dont put the sliced potatoes if the oil are not heated enough

2.Acha yai lako mpaka litakapofanya weupe ndio ugeuze
  Dont turn the mixture till the eggs turn to white cooked layer

3.Hakikisha unapika kwenye frying pan kubwa ya kuenea chipsi
 Use medium size frying pan

4.Unaweza kupika bila Mbogamboga pia inapendeza
  You can cook it without adding vegetable too

1.Chunga unga wako weka kwenye chombo cha kukandia na punguza kikombe kimoja kidogo cha unga mkavu pembeni kwa ajili ya kusukumia
2.Weka chumvi,maziwa,sukari kisha changanya weka pembeni
3.Chukua tui,changanya taratibu mpaka ushikane na kuwa donge
4.Ukande kwa dakika 10 mpaka ulainike
5.Chukua bakuli lenye mfuniko weka donge lako la unga kisha pakaa donge lako lote samli kijiko cha chakula kimoja hakikisha samli inaenea vizuri
6.Funika unga wako kwa dakika 10 kisha utoe endelea kuukanda tena mpaka uwe unavutika kwa dakika 10
7.Katakata madonge kulingana na size ya chapati unayoitaka 
8..Sukuma madonge yako duara kwa kutumia unga mkavu kisha yapake samli kati na sokota na uyapange kwenye bakuli lenye mfuniko na uyaache kwa robo saa
9..Baada ya hapo utaanza kusukuma duara kwa ajili ya kupika chapati

NGISI WA KUKAANGA(FRIED CUTTLEFISH)




MAHITAJI
1. Ngisi Wadogo 2
 2 Small Size Cuttlefish

2. Pilipili Mbuzi 2
 2 Red Chilli

3. Chumvi kijiko kidogo 1
 1 Tea spoon Salt

4. Mafuta robo lita
 1/4 Litre of Cooking Oil

MAANDALIZI/PREPARATION
1. Osha Ngisi vizuri kisha waweke kwenye bakuli 
   Wash the cuttlefish and put them in clean vessel

2. Kata kata vipande upendavyo
  Cut them in any pieces you wish

3. Twanga chumvi na pilipili na weka kwenye ngisi kisha wapete vizuri
  Grind the chilli and salt ,add into the cuttlefish and mix them well

4. Waache wakolee viungo kiasi cha robo saa
  Keep them a side for 15 minutes to let them marinated well

JINSI YA KUPIKA
1. Weka mafuta jikoni acha yapate moto
  Pour the cooking oil in a pan and let it heated for deep frying

2. Baada ya dakika kadhaa weka ngisi na ufunike kwa mfuniko maana huwa wanarusha mafuta sana
  After some minutes add the cuttlefish pieces in the pan and cover the frying pan

3. Baada ya dakika 5 wageuze na waache wazi
 After 5 minutes uncover them and flip them to cook the other side evenly

4. Kisha wakipiga rangi ya dhahabu watoe weka kwenye chujio au kwenye tissue wachuje mafuta
 When they turn in golden colour remove them and keep them on tissue to get dried

5. Waache wapoe wapo tayari kwa kuliwa na wali,mikate au wenyewe bila ya chochote
  Let them cool and ready to serve with rice,bread or can be eaten as they are

1. Usiweke ndimu huzidisha ngisi kurusha mafuta
  Don't add lemon juice during marination

2. Usiweke chumvi nyingi maana wenyewe wana chumvi pia
 Dont add lot of salt since they have original salt in it

3. Usiwakaange sana maana huwa wakavu na wagumu
  Dont over fry them

4. Hakikisha unafunika vizuri wakati wa kuwakaanga 
    Make sure you Cover the frying pan well when you fry them

MAANDALIZI/PREPARATION

1.Osha Matunda yako Vizuri
Rinse well your fruits with clean water

2.Menya Matunda yako kisha yaweke pembeni
Peel all your fruits and set a side 

3.Chukua Bakuli kubwa kiasi na kisu
Take a big bowl with a knife

4.Kata kata Papai vipande vidogo vidogo
Start to cut paw paw into small pieces and put them in the bowl

5.Kisha chukua Ndizi Nazo zikate kwa ukubwa ule ule wa papai
Then cut banana in the same size as paw paw

6.Malizia kukata tango kwa ukubwa ule ule wa ndizi na papai
Finally cut the cucumber also in the same size

7.Changanya mchanganyiko wako vizuri
Mix well the fruit in the bowl

8Kisha weka Karanga na weka fruit yako kwenye friji kwa muda wa lisaa
Then finish by adding ground nuts in your mixer and refrigerate it for an hour

9.Baadae itoe,na ichanganye na weka kwenye Glasi kisha weka vijiko viwili vya maziwa kwa kila gilasi
Later on remove it from the fridge and put your fruits in a glass then add two Tbsp of Condensed Milk

10.Changanya vizuri kisha tayari kwa kula
Use a spoon to mix your fruit with condensed milk and it is ready to serve

Angalizo/Note:

1.Hakikisha hauiweki maji hata kidogo
Make sure you don't add even a drop of water

2.Acha ipate baridi vizuri ili ufurahie ladha yake
Let it have enough cold before serve so as to enjoy it taste

3.Ni vizuri kupata matunda yalioiva hasa papai na ndizi
Better to use ripped fruits especially paw paw and banana

4.Ukipenda weka kipande cha ndimu wakati wa kula
You can add a little bit of lemon juice(optional) when its ready to be served

5.Usiweke ndimu nyingi husababisha kuwa kali
Dont add too much lemon juice can turn to sour

6.Hakikisha unatengeneza kwenye mazingira safi kabisa
Make sure you prepare it in a clean environment/place

MAHITAJI/INGREDIENTS
1. Samaki Vipande 3
 3 Pieces of Fish

2. Keroti ndogo 1
 1 Carrot

3. Pilipili Hoho(Pilipili boga) 1
 1 Green Pepper

4. Viazi Mbatata 3
 3 Potatoes

5. Kitunguu thomu Punje 2
 2 Cloves Garlic

6. Ndimu 1
 1 Lemon

7. Tangawizi ilotwangwa kijiko kidogo 1
 1 Tbsp grinded Ginger

8. Maji Lita 1
 1 Litre of Water

9. Pilipili Mbuzi 2
 2 Red Chilli

10. Royco/Fish Masala/Curry Powder kijiko 1
 1 Tbsp Royco/Fish Masala/Curry Powder

11. Chumvi kijiko Kikubwa 1 ½
 1 1/2 Tbsp of Salt


MAANDALIZI/PREPARATION


  1. Osha Samaki Vizuri weka kando
    Wash well those 3 pieces of fish
  2. Menya Viazi Mbatata
    Peel the Potatoes
  3. Osha viungo Vyako Vilobakia
    Wash all remaining ingredients


  4. Katakata keroti,pilipili boga weka pembeni
    Cut carrots and green pepper into different pieces and size as you pleased


  5. Twanga kitunguu Thomu
    Mince the garlic cloves
JINSI YA KUPIKA/HOW TO COOK


  1. Weka samaki kwenye sufuria ya kupikia
    Place the fish into cooking bowl
  2. Kata sehemu mbili sawa viazi mbatata na viweke kwenye sufuria
    Cut the potatoes each into half
  3. Weka Keroti,Pilipili boga 
    Add the pieces of carrots ,green pepper
  4. Kisha malizia kuweka vitu vyote vilotajwa hapo juu kasoro ndimu,pilipili na royco au masala yoyote ulionayo
    Then add all ingredients mentioned above except lemon and masala
  5. Weka jikoni acha ichemke,samaki akianza kuiva weka royco au masala yoyote ulionayo
    Put your cooking bowl on stove let it boil till the fish is starting to get boiled then add any kind of masala
  6. Koroga kisha kamua ndimu weka
    Steer your soup then add a juice of lemon
  7. Acha kwa dakika 2 weka pilipili zako usizipasue funika supu kwa dakika 1 ipate harufu ya pilipili
    Leave it for 2 minute then add red chill as it is without cut it into pieces then cover it so as the soup to have nice smell of chilli
  8. Funua angalia kama kila kitu kimeiva onja halafu epua
    Uncover it and test the soup if everything is Ok
  9. Weka kwenye Mabakuli tayari kwa kuliwa na Chapati au mkate uupendao
    Pour your soup into bowl and serve it

Angalizo:Note
1. Hakikisha unaonja chumvi kama imepungua uweze kuongeza
   Make sure you taste the salt and add it if needed
2. Kuwa makini samaki au viazi visivurugike kwa kuvichemsha sana
    Dont over boil the soup
3. Weka pilipili nzima ili hata asiependa pilipili aweze kula supu yako
    Dont cut the red Chilli so as any one can eat your soup
4. Usiweke ndimu mapema husababisha supu iwe chungu
    Dont put lemon juice earlier
5. Supu hii ni kwa ajili ya watu watatu
