MCHUZI WA NAZI WA PWEZA(OCTOPUS COCONUT MILK SAUCE)


MAHITAJI/INGREDIENTS
1.Pweza nusu kilo
 1/2 Kg Octopus

2.Tui Jepesi Kikombe Kikubwa 1
 1 Mug Light Coconut Milk

3.Tui Zito Kikombe Cha Chai 1
 1 Cup Heavy Coconut Milk

4.Nyanya za Mchuzi(Tungule) kubwa 3
 3 Medium Size Tomato

5.Kitunguu maji Kikubwa kiasi 1
 1 Medium Size Onion

6.Kitunguu thomu Punje 2 Kubwa
 2 Garlic Cloves

7.Tangawizi Kipande Kidogo 1
 1 Small Piece Ginger

8.Keroti Kubwa Kiasi 1
 1 Medium Size Carrot

9.Pilipili Boga Kubwa Kiasi 1
 1 Medium Size Green Pepper

10.Pilipili Ya Kuwasha 1
 1 Chilli

11.Chumvi Kiasi
 Salt to taste

12.Royco Kijiko Cha Chakula 1(Sio Lazima)
 1 Tbsp Royco(Optional)

13.Bamia 5
 5 Ladies Finger

14.Nyanya ya Paketi(Tomato Paste) Kijiko Cha chakula 1
 1 Tbsp Tomato Paste

15.Ndimu ilokamuliwa 1
 1 Squeezed Lemon

16.Maji Kiasi
 Some Water

MAANDALIZI/PREPARATIONS
1.Osha Viungo vyote vizuri
 Rinse well all ingredients with clean water

2.Kwenye jagi la blenda weka Nyanya ulizozikata,Pilipili boga,tangawizi,kitunguu thomu,kitunguu maji
 Chop the tomato,onion,green pepper,garlic cloves,ginger then add into the jug of blender

3.Saga mchanganyiko mpaka uwe usagike
  Blend the mixture untill mixed

4.Kata keroti katika umbo la duara weka pembeni
  Chop the carrot into the circular shape

5.Osha na msafishe pweza vizuri
   Rinse and clean the octopus well 

6.Mkate kate weka kwenye sufuria
 Cut the octopus into the pieces you prefer

7.Kata ncha za bamia kisha likate bamia katikati upate vipande viwili utapata vipande kumi kwa mabamia 5
 Cut the ends of ladies finger and then cut it into halves so as finally you get 10 pieces from 5 ladies finger

JINSI YA KUPIKA/HOW TO COOK
1.Weka sufuria ya pweza jikoni usiweke maji wala chumvi acha achemke kwanza
  In a pot add the octopus pieces let it boil without salt or water for some seconds

2.Utaona anakuwa mwekundu ongeza maji aive mpaka awe mlaini
 When it turns to red add some water keep boiling till tender

3.Akiiva mimina mchanganyiko wa nyanya kwenye pweza
 When it done add the tomato mixture

4.Acha ichemke kisha ongeza chumvi na ndimu
Let it boil and add salt into the mixture

5.Koroga na weka keroti,bamia na nyanya ya paketi na ukoroge
 Add carrots pieces,ladies finger and tomato paste then stir the mixture

6.Mimina royco na ukoroge acha uchemke kidogo
 Add royco and stir the mixture

7.Weka tui jepesi na pilipili ikiwa nzima acha lichemke mpaka lipungue usikoroge
 Add chilli then pour light coconut milk let it boil till the level of the sauce is little reduce but don't stir it any more

8.Kisha mimina tui zito acha lichemke mpaka lipungue na kuwa zito zito
 Pour the heavy coconut milk until the sauce becomes heavy

9.Epua acha upoe kidogo
 Let it slightly cool

10.Unaweza kula na wali,ugali au mkate upendao.
 You can serve with rice,ugali or breads

Angalizo:
1.Usiweke maji mengi wakati wa kusaga mchanganyiko wa Nyanya na viungo vyengine
 Do not add too much water when you blend the tomato with other ingredients

2.Ukisha kuweka Tui usikoroge mpaka mchuzi uwive
 Do not stir the mixture once you add coconut milk

3.Usimuweke Chumvi wakati wa kuchemsha huwenda akawa na chumvi nyingi kwasababu pweza ana chumvi yake mwenyewe
 Do not add salt when you boil the octopus it may result the sauce to be too salty since the octopus has salt in it

MAHITAJI/INGREDIENTS
1. Samaki Vipande 3
 3 Pieces of Fish

2. Keroti ndogo 1
 1 Carrot

3. Pilipili Hoho(Pilipili boga) 1
 1 Green Pepper

4. Viazi Mbatata 3
 3 Potatoes

5. Kitunguu thomu Punje 2
 2 Cloves Garlic

6. Ndimu 1
 1 Lemon

7. Tangawizi ilotwangwa kijiko kidogo 1
 1 Tbsp grinded Ginger

8. Maji Lita 1
 1 Litre of Water

9. Pilipili Mbuzi 2
 2 Red Chilli

10. Royco/Fish Masala/Curry Powder kijiko 1
 1 Tbsp Royco/Fish Masala/Curry Powder

11. Chumvi kijiko Kikubwa 1 ½
 1 1/2 Tbsp of Salt


MAANDALIZI/PREPARATION


  1. Osha Samaki Vizuri weka kando
    Wash well those 3 pieces of fish
  2. Menya Viazi Mbatata
    Peel the Potatoes
  3. Osha viungo Vyako Vilobakia
    Wash all remaining ingredients


  4. Katakata keroti,pilipili boga weka pembeni
    Cut carrots and green pepper into different pieces and size as you pleased


  5. Twanga kitunguu Thomu
    Mince the garlic cloves
JINSI YA KUPIKA/HOW TO COOK


  1. Weka samaki kwenye sufuria ya kupikia
    Place the fish into cooking bowl
  2. Kata sehemu mbili sawa viazi mbatata na viweke kwenye sufuria
    Cut the potatoes each into half
  3. Weka Keroti,Pilipili boga 
    Add the pieces of carrots ,green pepper
  4. Kisha malizia kuweka vitu vyote vilotajwa hapo juu kasoro ndimu,pilipili na royco au masala yoyote ulionayo
    Then add all ingredients mentioned above except lemon and masala
  5. Weka jikoni acha ichemke,samaki akianza kuiva weka royco au masala yoyote ulionayo
    Put your cooking bowl on stove let it boil till the fish is starting to get boiled then add any kind of masala
  6. Koroga kisha kamua ndimu weka
    Steer your soup then add a juice of lemon
  7. Acha kwa dakika 2 weka pilipili zako usizipasue funika supu kwa dakika 1 ipate harufu ya pilipili
    Leave it for 2 minute then add red chill as it is without cut it into pieces then cover it so as the soup to have nice smell of chilli
  8. Funua angalia kama kila kitu kimeiva onja halafu epua
    Uncover it and test the soup if everything is Ok
  9. Weka kwenye Mabakuli tayari kwa kuliwa na Chapati au mkate uupendao
    Pour your soup into bowl and serve it

Angalizo:Note
1. Hakikisha unaonja chumvi kama imepungua uweze kuongeza
   Make sure you taste the salt and add it if needed
2. Kuwa makini samaki au viazi visivurugike kwa kuvichemsha sana
    Dont over boil the soup
3. Weka pilipili nzima ili hata asiependa pilipili aweze kula supu yako
    Dont cut the red Chilli so as any one can eat your soup
4. Usiweke ndimu mapema husababisha supu iwe chungu
    Dont put lemon juice earlier
5. Supu hii ni kwa ajili ya watu watatu

MCHUZI WA ROSTI YA MAINI(ROASTED BEEF LIVER)


MAHITAJI(INGREDIENTS)
1.Maini nusu kilo
  Half kilo of beef liver

2.Nyanya(Tungule) kubwa 3
  3 Medium size of Tomato

3.Viazi mbatata vikubwa 4
  4 Medium size of potatoes

4.Kitunguu maji kikubwa 1
  1 Medium size of Onion 

5.Kitunguu thomu kilosagwa kijiko 1
  1 Tbsp of grinded garlic

6.Tangawizi ilotwangwa kijiko kimoja
  1 Tbsp of grinded ginger

7.Ndimu kubwa 1
  1 Lemon

8.Karoti 1
   1 Carrot

9.Pilipili boga(Pilipili hoho) 1
   1 Green pepper

10.Chumvi kijiko kikubwa 1
   1 Tbsp of salt

11.Nyanya ya paket(Tungule) nusu
  1/2 of Tomato Paste packet

12.Royco Mchuzi Mix kijiko 1
   1 Tbsp of Royco Mchuzi mix(Optional)

13.Maji vikombe 3
    3 Cups of water

14.Mafuta ya Sun flower au yoyote vijiko 4
   4 Tbsp Sun flower oil

15.Sukari kiduchu
A pinch of sugar

MAANDALIZI(PREPARATION).
1.Katakata maini vipande vipande
Cut beef liver in medium pieces as many as you want

2.Osha maini yako na yaweke pembeni
Wash them and put them in a pan or pot

3.Menya viazi mbatata na vikate vipande upendavyo kisha vioshe
Peel the potatoes,cut into sized pieces and wash them

4.Osha nyanya kisha zisage
Wash the tomato then blend them

5.Katakata vitunguu maji,pilipili hoho weka pembeni
Cut onion,greeen pepper

6.Para karoti weka pembeni
Grate the carrot and put them in a plate

7.Kamua ndimu kwenye kibakuli
Squeeze the lemon and put its juice in a bowl

JINSI YA KUPIKA(HOW TO COOK)
1.Weka Kitunguu thomu,tangawizi,chumvi kwenye maini na uyaweke jikoni
Put ginger,garlic and salt in pot of garlic and cook it in a medium heat

2.Acha dakika moja kisha weka maji kikombe kimoja
Leave it for a minute then pour a cup of water

3.Maji yakipungua ngeza maji kikombe kingine subiri kwa dakika 5 na yaepue
Put another cup of water when the fast water are lowered and wait for 5 minutes and pour them in a big bowl

4.Weka mafuta kwenye sufuria yakipata moto anza kukaanga vitunguu maji kisha pilipili hoho malizia na karoti
Keep the pot on medium heat put some oil and fry onion,green pepper and finally add  grated carrot

5.Kisha weka mbatata zikaange mpaka vifanye brown
Then add potatoes and keep frying with your vegetables mixture

6.Weka nyanya na chumvi kwenye mchanganyiko wako funika acha viive kwa dakika 5
Add blended tomato,salt then mix your mixture well and cover your pot well for 5 minutes

7.Mimina maini yako weka na royco kisha koroga vizuri
Add the cooked beef liver and royco then mix it well

8.Weka nyanya ya paketi koroga acha kidogo
After that add tomato paste and mix well

9.Weka ndimu ongeza na maji kidogo acha kwa dakika 2
Add lemon juice and add small quantity of water wait for 2 minutes 

10.Weka sukari koroga kisha onja mchuzi wako 
Add sugar mix your roast and taste it

11.Kama upo sawa epua hakikisha unakua mzito mzito ngoja upoe tayari kwa kula
If it is okay turn off the heat,if not add some salt and taste it again

12.Unaweza kula na Wali,Chapati,Mkate wa ufuta au kitu chochote
You can serve with Cooked rice,Loaf,Bread,Chapati and other staff.

Angalizo:Note
1.Hakikisha hauchemshi maini kwa muda mrefu yanakua magumu
Make sure dont over boil your beef liver so as to be soft

2.Kuwa makini na uwekaji maji ili upate mchuzi mzito kiasi
Make sure dont add too much water so as to get heavy roast

MCHUZI WA KUKU (chicken curry).




MAHITAJI
1.Kuku mzima
2.Nyanya kubwa 3
3.Karoti mbili
4.Pilipili hoho
5.Kotmiri
6.Tangawizi
7.Kitunguu maji
8.Kitunguu saumu kidogo
9.Ndimu
10.Mafuta ya kupikia
11.Chumvi (pilipili ukipenda)


MAANDALIZI
1. Menya vitunguu saumu na tangawizi na uvitwange pamoja.
2. Katakata kuku vipande vidogo kisha ukamulie ndimu na kupaka mchanganyiko wa tangawizi na vitunguu saumu (kiasi tu).
3. Katakata vitunguu maji na pilipili hoho uweke pembeni.
4. Grind (Kwangua) kwenye grater nyanya na karoti pia uweke pembeni.
5.Katakata kotmiri vipande vidogo uweke pembeni.
6. Andaa kikaango na jiko.


JINSI YA KUPIKA1. Bandika kikaango jikoni na mafuta kiasi, yakishachemka weka vitunguu maji na kaanga hadi vimelainika na kuiva (hakikisha haviungui).
2. Weka pilipili hoho na karoti na endelea kukoroga hadi vyote viive na kulainika.
3. Sasa weka vipande vya nyama koroga na funikia kwa dakika 3, kisha weka nyanya zako ulizo grind weka chumvi na koroga ili zichanganyike vizuri, vikishachanganyika weka kotmiri na pilipili kama utapenda. Acha vichemke kwa dakika 5. Hakikisha moto sio mkali sana.
4. Angalia kama nyama zimeiva vizuri kisha epua mchuzi wako.
5. Pakua kwenye bakuli na katakata kotmiri uweke kwa juu.
Unaweza kula kwa ugali, wali, ndizi rost au chipsi.
