MIKATE YA MAZIWA (MILK BREAD)



MAHITAJI/INGREDIENTS
1.Unga wa Ngano 550gm
  Plain Purpose Flour 550gm

2.Maziwa 300ml
 Milk 300ml

3.Sukari Vijiko 4
 Sugar 4 Tbsp

4.Hamira Vijiko 2
  Yeast 2 Tbsp

5.Chumvi Kijiko Cha Chai 1/2
  Salt 1/2 Tea Spoon

6.Mayai 2
 Eggs 2

7.Maziwa ya Unga Vijiko 2
  Milk Powder 2

8.Ufuta Kijiko 1
  Sesame seeds 1 Tbsp 

9.Siagi Vijiko 2
   Butter 2 Tbsp

10.Unga wa Kusukumia 1/2 Kikombe
   Flour for rolling dough 1/2 Cup

MAANDALIZI/PREPARATIONS
1.Kwenye bakuli changanya unga,maziwa ya unga,sukari,chumvi na hamira
  In a big bowl add flour,milk powder,salt,sugar and yeast 

2.Tumia mwiko kuchanganya vizuri
  Mix all ingredients in a bowl with spartula

3.Ongeza yai moja,siagi na maziwa ya maji
  Add an egg,butter and milk 

4.Kanda unga mpaka uwe mlaini na unavutika
  Mix all and knead the dough till elastick

6.Ufunike uache uumuke vizuri
  Cover the bowl let it rise till double in size

7.Ukisha umuka toa kwenye bakuli ukande kidogo mpaka hewa yote itoke
  Fold the dough until all the air is removed

8.Kata kata donge lako kupata vipande vilivyo sawa na yafanye kuwa maduara
  Spilt the dough into equal pieces and form into round ball

9.Chukua unga mkavu sukuma madonge kwa urefu kisha yazungushe kuanzia ncha ya kwanza hadi ya mwisho
  Use the flour remain and sprinkle to the surface and flatten the balls into long dough then roll it starting from the first end to the last end

10.Rudia kwa madonge yote yalobakia
  Repeat till you finish all balls

11.Paka trei yako mafuta au siagi
  Grease the tray

12.Panga mikate yako
  Keep the bread into the tray 

13.Vunja yai lilobakia na pakaa mikate yako
  Break the egg remain and brush it on the surface of the bread

14.Nyunyizia ufuta mikate yako acha iumuke kwa dakika 20
  Sprinkle the sesame seeds and let them raise for 20 minutes

JINSI YA KUPIKA/HOW TO COOK
1.Washa Jiko la umeme moto wa juu na chini 180'C
  Heat the oven 180'C

2.Oka mikate kwa muda wa dakika 20 mpaka 30
  Bake them for 20 to 30 minutes 

3.Ikiiva itoe jikoni acha ipoe na itoe kwenye trei yake
  When they are ready remove them from the oven let them cool and unmold from the tray

4.Weka kwenye sahani paka siagi tayari kula na kinywaji upendacho 
  Apply butter after that they are ready to serve with any drinks

  Make sure you knead the dough till soft

2.Hakikisha mikate inaumuka vizuri kabla kuioka
  The breads must be rise well enough before baking

JUISI AU MILK SHAKE YA TENDE(DATES MILK SHAKE)



MAHITAJI/INGREDIENTS
1.Tende 20
 20 Dates

2.Maziwa Glasi 1 na nusu
 1 and 1/2 Glass of Milk

3.Karanga zilosagwa robo kikombe
 Quater Cup of  Crushed Ground nuts 

4.Arki Pine Apple robo kifuniko cha chupa yake
 Pine Apple Essence 1/2 Cap(Caps of Pine Apple Essence Bottle)

5.Maji Ya Uvugu uvugu Kikombe Kidogo 1/2
  1/2 Small Cup of Warm Water


MAANDALIZI/PREPARATIONS
1.Toa kokwa(Mbegu) kwenye tende upate nyama ya tende tu
  Remove the hard pit from dates chop them coarsely

2.Weka kwenye jagi la blenda nyama za tende
 Add them to the jug of blender

3.Mimina maji kwenye blenda acha tende ziroane kwa dakika zipatazo 10
   Pour a cup of water into the blender's jug let the dates be soaked for atleast 10 minutes 

4.Weka maziwa kwenye friza hadi yafanye chenga chenga
  Refrigerate milk until frozen 

JINSI YA KUTENGEZA/HOW TO MAKE
1.Saga Tende zako taratibu mpaka zisagike vizuri
 Blend the soaked dates well till you gets smooth puree

2.Mimina karanga kwenye jagi
 Add crushed ground nuts into the jug

3.Mimina maziwa kwenye jagi lenye tende
 Pour the frozen milk into the jug having date

4.Malizia kuweka arki
 And finally add pine apple essence

5.Saga Mchanganyiko wako taratibu mpaka usagike vizuri
 Blend the mixture well till gets smooth puree

6.Ikichanganyika vizuri mimina kwenye glasi tayari kwa kunywa
 When blended well pour into the glass ready to serve
 
7.Unaweza kuinywa yenyewe au na kitafunio chochote upendacho
 You can serve it with any bite you prefer or drink as it is

1.Usiache maziwa yakaganda hadi kuwa barafu ngumu yakifanya chenga tu inatosha kabisa 
 Do not let the milk frozen complete ,remove in the freezer once started to form the ice  

2.Hakikisha unaondoa kokwa(mbegu) za tende vizuri
 Make sure you remove carefully the hard pit in the dates

SAMBUSA ZA KUBABUA ZA NYAMA (MINCEAD MEAT SAMOSA)


1.Nyama ya kusaga robo
 1/4kg Minced Beef

2.Vitunguu maji vikubwa kiasi 3
  3 medium size Onion

3.Vitunguu thomu vilotwangwa kijiko cha chai 1
  1 Tea spoon  Garlic Cloves 

4.Tangawizi Vijiko vya chai 2(ilotwanga)
 2 Tea spoon minced Ginger

5.Pilipili ya kuwasha ilotwangwa kijiko cha chai 1(au zaidi kama mpenzi wa pilipili)
 1 Tea spoon Chili(Chopped or crushed)or more if you like chilli

6. Chumvi kiasi
 Salt to taste

7.Maji kiasi
  Some Water

8.Mdalasini wa unga nusu Vijiko vya chakula 2
   2 Tbsp Cinnamon powder

9.Uzile(Binzari nyembamba) ya unga Vijiko cha chakula 2 
    2  Tbsp Cumin powder

10.Mafuta ya kusukumia Kikombe kidogo cha chai
    1 Cup Cooking Oil

11. Mafuta ya kupikia lita 1  
       1 Litre of Cooking Oil

12.Pilipili hoho(Pilipili boga) ndogo 1(Ukipenda)
 1 Green pepper (Optional)

13.Karoti ndogo 1(ilioparwa) (Ukipenda)
 Grated carrots (Optional)

14.Njegere robo kikombe (Ukipenda)
 ¼ Cup Green Peas(Optional)

15.Uji wa Unga wa Ngano robo kikombe
¼ Cup Heavy wet mixture of plain flour and water

16.Unga wa Ngano Nusu
 1/2 Kg Plain Flour


MAANDALIZI/PREPARATION
1.Changanya kitunguu thomu,pilipili,tangawizi na uviweke pembeni
   Mix red chilli,ginger and clove of garlic in a bowl and keep it aside

2.Menya kitunguu maji,karoti
 Peel the onion and carrots

3.Kisha kata kitunguu maji vidogo vidogo katika umbo la pembe nne
 Chop the onion into small qubes

4.Katakata Pilipili hoho ndogo ndogo
 Chop the Green Pepperinto small pieces 

5..Andaa bakuli jengine weka unga wa ngano na chumvi kiasi kisha uchanganye vizuri 
 Into separate bowl mix plain flour and salt

6.Weka maji taratibu  kwenye bakuli la unga mpaka ushikane
  Add little water till you get the dough

7.Kanda unga kidogo tu usiwe mlaini
  Knead the dough for some minute make sure the dough is not soft

8.Gawa donge lako katika maduara matano tano
  Divide the dough into 5 small balls

9.Kisha yakatamize kwa mkono upate vichapati viduchu vitano
 Press your balls by hand to get small cycle

10.Chukua mafuta kwenye kikombe mimina juu ya kichapati kimoja kama vijiko vitatu.
 Add two table spoon of oil on top of the cycle

11.Weka donge jengine juu ya lile la kwanza halafu mimina mafuta kama ulivyofanya mwanzo
 Take another cycle keep on top of the first cycle and pour some oil as you did before

12.Rudia kuweka madonge juu ya nyengine mpaka umalize yote matano
  Repeat the above process till you finish all five dough

13.Chukua kifimbo Sukuma madonge yote kwa pamoja mpaka upate lichapati kubwa
  Use a rolling pin to flatten all five dough together to get a big cycle


JINSI YA KUPIKA
1.Weka nyama jikoni tia chumvi, usiweke maji acha itoe maji yenyewe hadi iwive
  In a medium heat cook the minced beef add salt only and let it dry

2.Ikiiva epua nyama acha ipoe
  When it’s ready remove from the stove and let it cool

3.Changanya nyama yako vizuri weka mchanganyiko wa tangawizi,mdalasini,uzile na uichanganye vizuri
 Then add mixture of ginger,cinnamon powder,cumin powder in the cooked minced beef 

4.Weka kitunguu maji,karoti,pilipili hoho,njegere ulivyovikata weka kwenye nyama
 Add Chopped Onion,Carrot,Green Pepper,green peas in the minced meat

5.Kisha changanya vizuri na uonje
  Keep mixing the meat mixture and taste it


6.Kama iko sawa endelea
  If it is okay proceed to the next step

7.Chukua lile lichapati liweke kwenye chuma cha kupikia chapatti kwa moto mdogo kiasi
 In a medium heat add the flatten dough into the pan

8.Ikiianza kufanya vibofu na rangi ya dhahabu kwa mbali ligeuza
  Turn to the next side so can be cooked evenly when turn into light golden colour

9. Upande wa pili ukibadilika rangi utoe
  Take out from the pan when the other side is done

10.Chukua kisu ikate upesi upesi pande nne zenye umbo la pembe tatu
 Take a nife or pizza knife slice to get four triangle



11.Ikiwa ya moto ibandue haraka haraka kila pembe tatu utoe pembe tano kwa kila pembe tatu moja
  While it is hot take each triangle unbind it to get five triangle to each one

12.Hakikisha unapata jumla ya papi(manda) 20 za umbo la pembe tatu
  Make sure you got 20 triangular pastry as a total of four pastry

13.Chukua papi(manda) moja kutanisha pembe mbili kisha weka nyama kati kati
    Take one pastry ,make sure the two end meet at the center then add the meat minced inside of it

14.Chukua uji wa unga wa ngano pakaza katika ile ncha moja ilobaki kwa ndani na ibane mpaka ile ncha ifike kati kati
 Take the wet flour mixture apply in the inner side of the third end then bind by keeping it to the center of the pastry

13.Rudia mpaka umalize sambusa zote
   Repeat the procedure till you finish all samosa

14.Weka mafuta kwenye karai
    Add the Cooking Oil into the frying pan 

15.Mafuta yaache yapate moto kiasi
   Bring the pan to the medium heat 

16.Weka sambusa zako kulingana na ukubwa wa karai
   Add the samosa according to the size of your frying pan

17.Ziache dakika kadhaa zikiwa za rangi ya dhahabu ilokoza zigeuze na ziwache kidogo
   Leave for some minutes and turn into other side when it changes to golden colour 

13.Zikiwa za kote zitoe weka kwenye chujio au tissue zichuje mafuta
  When they turn into golden brown completely take them out from the pan into sieve or tissue

14.Zikipoa unaweza kula zenyewe au najuisi au mkate
  When they are slightly cool You can serve with bread,chapati,juice or as they are.

1.Ili sambusa ziwe nzuri hakikisha zinachapuka viungo vizuri
        Marinate the minced meat mixture well to get samosa with good taste

      2.Sukuma ukubwa wa chapatti kulingana na chuma chako cha chapatti
        Flatten dough size should exceed the size of your pan

      3.Wakati wa kuzipika hakikisha mafuta yasiwe na moto sana
          Don’t heat the oil to the maximum

      4.Zipike taratibu usizifanyie haraka kuzigeuza hakikisha zinapiga rangi ya dhahabu ndio uzigeuze
        Don’t turn into other side if the other side is undone  

    5.Wakati wa kusukuma yale madonge matano usisukumie unga hata kidogo yale mafuta yanatosha
 When you roll out to flatten the dough don’t add or sprinkle the plain flour on top of the dough

6.Rudia kwa mayai yote yalobakia
7.Nyunyizia unga kwenye maduara ya katlesi zako
8.Chukua karai mimina mafuta wacha yapate moto sana hadi yatoe moshi
9.Tumbukiza katlesi kwenye mayai mabichi kisha weka kwenye mafuta yamoto
10.Iache bila kuigusa kwa dakika 3 mpaka iwe ya brown
11.Igeuze kisha acha kwa dakika 3 nyengine toa chuja mafuta.

KUKU WA TANDOORI(TANDOORI CHICKEN)


MAHITAJI/INGREDIENTS
1.Kuku Mzima
 A whole Chicken

2.Tandoori(Rangi Nyekundu ya Unga) Robo Kijiko Cha  Chai 1
   1/4 Tea spoon Tandoori Powder

3.Chumvi Kiasi
  Salt to taste

4.Vinegar  Vijiko  Vya  Chakula  2
  2 Tbsp Vinegar  

5.Pilipilili ya kutwangwa  Kijiko  Cha  Chakula 1
  1 Tbsp Minced Red Pepper

6.Pilipili Manga kijiko Cha Chai 1
  1 Tea spoon Black Pepper

7.Mtindi  Robo Kikombe  Cha Chai
  1/4 Cup Plain Yogurt

8.Mafuta  ya Alizeti Vijiko Vya  Chakula 3
  3 Tbsp Sun Flower Oil

9.Tangawizi ilotwangwa Kijiko Cha Chakula 1
  1 Tbsp Grated Ginger

10.Kitunguu Thomu kilotwangwa Kijiko Cha Chai 1
 1 Tea spoon minced Garlic

11.Chicken Masala Kijiko Cha Chakula 1
 1 Tbsp Chicken Masala

12.Uzile(Binzari Nyembamba) kijiko Cha Chai 1
 1 Tea spoon Cumin seeds

MAANDALIZI/PREPARATION
1.Mkate Kuku  vipande  viwili sawa
  Slip the chicken into two halves

2.Muoshe vizuri kwa maji safi
 Rinse the halves well with clean water

3.Muweke Viungo vilotajwa hapo juu kasoro mafuta
 Marinate them well by adding the ingredients except oil

4.Vaa gloves za plastik waeneze vizuri viungo hadi wakolee
  Use plastic gloves to marinate them well

5.Weka kwenye friji kiasi cha masaa mawili au Zaidi
  Put them in the fridge atleast two hours or more

6.Ukiwatoa wamiminie mafuta waeneze vizuri na weka tayari kwa ajili ya kuwapika
  Remove from the fridge and pour the oil onto them 

JINSI YA KUPIKA/HOW TO COOK
1.Washa Oven Moto Nyuzi 180,weka moto wa juu na chini 
  Heat the oven by 180'C set the upper and lower heat

2.Weka kuku wako na wapike kwa saa moja(Dakika 60)
  Bake the Chicken for atleast an hour(60 minutes)

3.Kama jiko halina moto mkali usifungue jiko mpaka lisaa limalize
  If your oven heat is controllable don't open it,till the chicken are done

4.Baada ya lisaa kama hawajaiva vizuri pika tena kwa dakika 10 tu
  If you see they are not cooked well for an hour cook them for 10 minutes more

5.Baada ya huo muda wapo tayari kula na Chipsi au Wali
  After that time they are ready to serve them with chips,rice

Angalizo:
1.Kama jiko lina moto mkali pika kulingana na moto wa wastani wa jiko lako
 If your Oven is uncontrollable set the degree according to your Oven

2.Unaweza kumuweka kwenye friji  zaidi ya masaa 6 au siku nzima
  You can refrigerate them for 6 hours or a day 

3.Ikiwa jiko lako lina uwezo wa kuseti muda ni vizuri uweke muda wa lisaa kuepuka kufungua jiko mara kwa mara kwani husababisha joto kupotea
 If your Oven has timer better to set so as to avoid to loose heat when opening the ovening door

4.Unaweza kuweka Tandoori Zaidi kama utapenda kuku wako awe mwekundu Zaidi.
  You can add more Tandoori powder if you prefer dark red chicken

5.Unaweza Kumpika kwenye jiko la mishkaki kama hauna oven.
  You can bake in Grill or Barbeque stove if you dont have an Oven

TAMBI ZA NAZI(DRIED CHINESE NOODLE)


MAHITAJI/INGREDIENTS
1.Tambi (robo) mafungu 2
 1/4 kg  Chinese Noodle

2.Tui Nusu Kikombe
 1/2 Cup of Heavy Coconut Milk 

3.Sukari Vijiko 5
 5 Tbsp of Sugar

4.Hiliki 10
 10 cloves of cardamon 

5.Zabibu robo kikombe
 1/4 Cup of Dried Grapes

6.Maji  lita 1
1 litre of Water

7.Arki Vanilla kifuniko 1
 1 Cup of Vanilla

MAANDALIZI/PREPARATIONS
1.Vunja vunja tambi zako weka kwenye sahani.
 Break the pieces of dried chinese egg noodles

2.Twanga hiliki zako.
 Grind the cloves of cardamon

3.Weka maji kwenye sufuria.
  Pour some water in a pot

JINSI YA KUPIKA/HOW TO COOK
1.Teleka maji yaache yapate moto vizuri.
 Heat large pot of water to a full boil.

2.Mimina tambi kwenye maji ya moto acha zilainike kisha mimina kwenye chujio kikauke maji.
 Add the noodle in the hot water until they are flexible then pour them in a seave to get dried

3.Mimina tui kwenye sufuria weka hiliki na sukari acha lichemke.
 Add the coconut milk in a cooking pot with sugar and cardamon and let it boil.

4.Kisha weka arki,zabibu na mimina tambi zako.
 Then add Vanilla,dried grapes and noodles.

5.Changanya tambi zako kwa kutumia mwiko wa wali(Tumia kugeuzia tambi kule kwa kushikia mwiko sio pa kupikia).
 Use a wooden spatula to mix them( use the handle of a spatula to mix the noodle) 

6.Geuza tambi zako mpaka zikaribie kukauka kisha funika acha zikauke.
 Mix them well till they are nearly to get dried and cover them.

7.Zikikauka pakua tayari kula zenyewe au na samaki wengine hupenda kula na mchuzi au maharage.
 When they are completely dry,then are ready to serve you can have them as they are or you can eat them with roast or cooking beans.

1.Usichemshe Tambi sana mpaka zikavurugika
 Don't over boil the noodles

2.Usiweke tambi haraka kabla tui halijachemka zitakuwa zimaji
 Don't add the noodle if the coconut milk are not boiled yet

3.Hakikisha tambi zinakauka vizuri kabla ya kuzipakua
 Let the noodle dried enough before serve them.

 1 Coconut (OR)coconut powder

5.Ndimu 1
 1 Lemon

6.Karoti 1
 1 Carrot

7.Pilipili Hoho(Pilipili boga)1
 1 Green Pepper

8.Kitunguu maji kikubwa 1
 1 Onion

9.Nyanya ya Paket vijiko vya chakula 2
 2 Tbsp of Tomato Paste

10.Royco(Sio lazima)
 Royco OR Any Masala(Optional)

11.Tangawizi na kitunguu thomu ilotwangwa kijiko cha chakula 1 
 Mixture of Garlic with Ginger

12.Vitunguu thomu punje 3 kwa ajili ya Mchuzi
  3 Garlic Cloves for blended tomato

13.Chumvi Kiasi
  Salt to taste

MAANDALIZI/PREPARATION
1.Osha viungo vyako vyote vinavyotakiwa kuoshwa
 Wash all ingredient if needed

2.Katakata Nyanya,Kitunguu maji,thomu,Pilipili hoho weka kwenye blenda na uvisage vyote
  Cut tomato,onion,green pepper,garlic and add them into jug then blend them

3.Loweka ndizi mbichi kwenye maji ili upunguze utomvu
  Soak the banana into big bowl 

4.Menya Ndizi zipare na kata kata kwa umbo unalolipenda
  Peel them and grate a little bit to remove upper layer of it then cut them to any size you prefer

5.Kuna nazi yako na ichuje
  Prepare the fresh coconut to get the coconut milk if you use Fresh Coconut instead of Coconut Powder

4.Weka tui zito na jepesi mbalimbali
 Separate heavy Coconut milk And light one during preparation

JINSI YA KUPIKA/HOW TO COOK
1.Chemsha kuku ulomuweka tangawizi kitunguu thomu na chumvi mpaka awive muache na supu kiasi
 Boil the chicken added mixture of garlic and ginger,with salt till cooked

2.Chukua sufuria nyengine chemsha ndizi na chumvi kiasi mpaka ziive kisha mwaga maji weka pembeni
   Use a separate Cooking Pot to Boil the banana added salt till cooked, then pour the remain water and leave the banana dry in the pot

3.Weka nyanya ulizozisaga kwenye nyama yako acha ziive
  Add the mixture of Tomato in your cooked chicken

5.Weka nyanya ya paketi na Royco
  Add tomato paste And Royco

6.Weka chumvi na ndimu acha kwa dakika 1 na uonje mchuzi wako kama hauja chapuka ongeza chumvi kidogo
 Add salt and lemon juice and taste it after 1 minutes,if its okay remove from the heat if  not Ok,add little salt in it

7.Weka tui jepesi kwenye ndizi na chumvi acha zichemke kwa dakika 5 usikoroge
 Add light coconut milk with salt in the pot that having banana and let them cooked for at least 5 minutes don't use spatula to mix it 

8.Kisha weka tui zito acha lichemke kwa dakika 3
 Then add the heavy coconut milk and leave it for 3 minutes

9.Weka mchuzi wako wa nyama acha kwa dakika 2 epua
 Add the mixture of Chicken with tomato you cooked before and leave it for 3 minutes

10.Acha zipoe kidogo pakua kwenye sahani tayari kwa kula
 Let them cool ready to serve

NB1.Hakikisha mchuzi unakua mzito mzito na mdogo
           Make sure the cooked mixture of chicken with tomato is too heavy 

       2. Pika ndizi zako kwa moto wa wastani ili zisigande kwenye sufuria
           Prepare your dish into medium heat

       3.Epuka kukoroga wakati wa kuzipika ndizi zako
         Don't mix it by using spatula during cooking this dish

       4.Kama utataka kukoroga chukua tambara safi shika sufuria yako itikise au chukua banio la ugali bana kwenye sufuria na uitikise
     If you want to mix use a clean towel and take your cooking pot and shake it a little bit

1.Chunga unga wako weka kwenye chombo cha kukandia na punguza kikombe kimoja kidogo cha unga mkavu pembeni kwa ajili ya kusukumia

3.Chukua tui,changanya taratibu mpaka ushikane na kuwa donge
4.Ukande kwa dakika 10 mpaka ulainike

1.Andaa jiko la mkaa lenye moto wa wastani
2.Weka maji na chumvi kidogo kwenye kibakuli kinachoweza kuingia mkono
3.Chukua chuma(Frying pan) cha kupikia ufuta weka mkono kwenye maji ya chumvi kisha fanya kama unakungutia maji yaloganda kwenye mkono katika chuma chako
4.Chota kwa mkono uji wako weka kama mikono miwili ya uji kwenye chuyma cha mkate
5.Kiweke jikoni kisha chukua ufuta kiasi nyunyizia juu ya ule uji kwenye chuma chako
6.Acha kwa dakika 3 ukiona unaanza kubadilika kuwa na weupe wa kuiva kwa chini geuza chuma cha mkate juu chini kama unataka kuumwaga mkate
7.Weka chuma hivyo hivyo huku ukiuangalia mkate wako usiungue
8.Ukiwa wa brown geuza chuma kisha tumia kisu kutoa mkate wako
9.Weka kwenye sahani chukua brush chovya kwenye mafuta kisha upake mkate wako kwa kupakaa mafuta kidogo tu
10.Rudia njia hizo hapo juu mpaka umalize uji wako wote.

CHAPATI ZA MAJI(PANCAKES)


MAHITAJI/INGREDIENTS

1.Unga wa ngano nusu kilo
 1/2 kilogram of All Purpose flour

2.Kitunguu maji kikubwa 1
 1 big Onion

3.Pilipili boga 1
 1 Green pepper

4.Karoti 1
 1 Carrot

5.Yai 1
 1 Egg

6.Chumvi cha chakula 1
 1 Tbsp of Salt

7.Mafuta nusu kikombe
 1/2 cup of Cooking oil

8.Maji kikombe kikubwa 1 au zaidi
 1 Big Cup of water or more

9.Sukari kijiko cha chai kimoja 1
 1/2 Tbsp of sugar


MAANDALIZI/PREPARATION
1.Chukua bakuli kubwa kiasi chekecha unga weka pembeni
 Sift the flour in a big bowl and keep it a side.

2.Kata kata vitunguu maji kama vya mchuzi vifikiche kwa mkono kuviachanisha weka pembeni
 Cut the onion in small sized pieces and crumble them by your hand

3.Para karoti weka pembeni
 Grate the carrots

4.Kata pilipili boga nyembamba weka pembeni
 Cut thin and small pieces of  green pepper

5.Vunja yai kwenye kibakuli lipige na umma kama unataka kulikaanga weka pembeni
 Take a small bowl and folk then beat an egg keep it a side

6.Chukua maji weka kidogo kidogo kwenye unga huku ukiuchanganya na mchapo au upawa mpaka uwe na uzito kiasi hakikisha hauwi mwepesi sana wala mzito sana
 Pour water slowly in a flour and mix it well then whisk the wet mixture and make it neither heavy nor light

7.Mimina vitunguu,karoti na pilipili boga kisha koroga uchanganye vizuri
Put onion,carrots and green pepper in your wet mixture and whisk it 

8.Weka chumvi ,sukari na yai kisha changanya vizuri mpaka uji wako uchanganyike na vitu vyote
 Put salt,sugar and bitten egg and keep whisk the mixture till all ingredient well mixed

JINSI YA KUPIKA/HOW TO COOK
1.Weka chuma(frying pan) chako jikoni na mafuta kijiko kimoja yaeneze kwenye chuma chote
 Pour a Tbsp of oil in Non Stick Frying Pan and swirl around so that it lightly coats the surface,let it heated for a minute

2.Tumia upawa chota miko miwili au zaidi inategemea na ukubwa wa chuma chako na ieneze kwenye chuma chote
Use a cooking spoon mix well your wet mixture then take two of them and pour the mixture in a frying pan

3.Acha kwa dakika 3 mpaka uone mkate wote umekauka ile umaji maji wa ubichi haupo
  Let cooked for 3 minutes till the upper side become dry

4.Ugeuze upande wa pili uache pia kwa dakika 3 ukauke
 Carefully lift the edge of the pancake with spatula and flip on the another side and cook again till dried for about 3 minutes

5.Chota mafuta kijiko kimoja weka chini ya mkate wako huku ukiuzungusha mpaka upate yangi ya kuvutia
 Put a Tbsp of oil at bottom of your cooked pancake and use a Tbsp to squeeze it till have golden brown colour

6.Ugeuze kisha utoe weka kwenye kwenye sahani
 Flip over and and remove it from pan to the plate

7.Rudia njia hizi mpaka umalize uji wote
Repeat the above procedure till you finish the whole wet mixture

8.Weka mezani kula na chai ya maziwa,juice au kinywaji chochote
 Serve with tea,milk,juice or any drink

1.Yai muhimu usipoweka mikate inaganda kwenye chuma
 You must put an egg otherwise the pancake will sticky in pan 

2.Kama utakosa yai weka mafuta kijiko 1 cha chakula
 Use a Tbsp of cooking oil in absence of an egg

3.Tumia Nonstick Frying Pan kwa kuhofia kugandisha mikate mara kwa mara
 Use Nonstick Frying pan to avoid sticking of pancakes frequently

4.Ili upate mikate mizuri ya kuvutia hakikisha moto ni wa wastani ukipikia moto mkubwa zinakua mbaya
 Use medium heat to get delicious and attractive pancakes otherwisewont have good taste

NDIZI MBIVU(HOW TO COOK PLANTAIN WITH COCONUT MILK)



MAHITAJI/INGREDIENTS
1.Ndizi mbivu(Mkono wa tembo) 4
 4 Plantains 

2.Nazi kubwa 1
 1 Large Fresh Coconut

3.Sukari kikombe kidogo 1
 1 Small Cup Sugar

4.Arki Vanilla kijiko cha chai 1
 1 Tea Spoon Vanilla 

5.Chumvi kiduchu
 Pinch of Salt

6.Hiliki punje 10
  10 Cloves of Cardamom 

7.Zabibu pakti Ndogo 1
 1 Small Packet Raisins 
8.Custard kijiko cha chakula 2
  2 Tbsp Custard Powder
  
9.Maji kiasi
  Some Water 

MAANDALIZI/PREPARATIONS
1.Osha ndizi zikiwa na maganda yake vizuri
  Wash the plantains with clean water
2.Kata ndizi yako sehemu mbili sawa upate vipande viwili
  Cut the plantains into halves

3.Pasua ndizi katikati kisha imenye maganda usiyatupe yaweke pembeni sehemu safi
  Slice one half at the center ,remove the skin and keep them aside for other uses

4.Weka maganda yako kwenye sufuria unayopikia yapange vizuri
  Place the skin in the pan that you will use for cooking the plantains

5.Weka ndizi juu ya maganda yake zipange vizuri kwenye sufuria
   Add the peeled plantains on top of  skin

6.Kuna nazi kisha saga kwenye blenda au chuja kwa mkono
   Grate the coconut and blend it or use your hand to get coconut milk

7.Weka tui zito mbali na tui jepesi mbali
   Make sure you separate the heavy coconut milk and light one

8.Twanga hiliki mpaka iwe ya unga
  Grind the cardamom seeds to get cardamom powder

JINSI YA KUPIKA/HOW TO COOK
1.Chukua tui jepesi na chumvi mimina kwenye sufuria ya ndizi
  Pour light coconut milk in the pan contained plantains ,add salt too

2.Kisha weka sukari na zabibu weka jikoni zifunike ziache kwa dakika 10 zikichemka
  Add sugar and raisins,then cover the pan let it cooked for 10 minutes

3.Baada ya dakika hizo weka arki, hiliki na tui zito ila libakishe kidogo
  Add vanilla,cardamom and heavy coconut milk(dont add all of it)

4.Acha zichemke kwa dakika 5 
  Let it cooked for 5 minutes 

5.Changanya custard kwenye tui lililobakia na ikoroge vizuri kisha mimina kwenye ndizi baada ya dakika 1 epua
  Mix custard powder and remained coconut milk and pour it in the mixture,leave it for just a minute and remove the pan from the stove

6.Acha zipoe pakua tayari kwa kula kama zilivyo au na wali au na mkate
  Let them cool,serve them as they are or you can serve with bread or rice

Angalizo:Note;
1.Kama ndizi ni ngumu weka tui jepesi jingi ili ziive na zilainike kabla kuweka tui la pili au unaweza kuzichemsha kidogo
 If the plantains are not soft enough better to boil before adding coconut milk .Or add large amount of coconut milk and cook it for a long time before adding the heavy coconut cream

2.Huu upishi haukorogwi so usikoroge hata kidogo tumia kitambaa kisafi cha jikoni kutikisa sufuria
  Do not stir them while cooking.Use the clean kitchen towel and take the pan and shake it if needed 

3.Pika kwa moto wa kiasi kuepusha kuungua
  Cook them by using the middle heat

4.Unaweza kuwekavijiti vinene badala ya maganda ya ndizi ukihofia zitaungua chini
  You can place large stick at the bottom of the pan instead of there skin

5.Zenyewe zina sukari kwahio ukitaka punguza sukari kama hupendi nyingi
  You can reduce the amount of sugar mentioned if you dont like too much sugar

6.Hakikisha tui la mwanzo linakua zito zito ili kupendezesha ndizi zako
  Make sure the first coconut milk is too heavy

7.Hakikisha unaweka maganda au vijiti chini ya sufuria ili zisiungue
  Make sure you place stick or there skin to avoid the plantain to get burnt

4.Acha tui lipungue kisha mimina lile tui zito na arki
5.Acha lichemke kidogo na ikiwa nzito nzito epua
