MISHKAKI YA MAINI(BEEF LIVER BARBEQUE)


MAHITAJI/INGREDIENTS

1 Tea Spoon Minced Fresh Chilli Pepper

4.Kitunguu thomu kijiko Cha Chai 1
1 Tea Spoon Minced Garlic Cloves

5.Chumvi kijiko Cha Chai 1
 1 Tea Spoon Salt

6.Ndimu Vijiko Vya Chakula 2
 2 Tbsp Lemon Juice

7.Beef Masala Kijiko Cha Chakula 1
 1 Tbsp Beef Masala

8.Keroti Kubwa 1
1 Carrot

9.Mafuta robo kikombe
1/4 Cup Cooking Oil

MAANDALIZI/PREPARATION
1.Osha Maini vizuri
 Rinse well the liver

2.Kata maini kwa urefu kisha kata vipande vikubwa kiasi
Slice the liver in a long pieces and cut those pieces into beef cube for stew

3.Jitahidi usikate vipande vidogo kwasababu mishkaki ukiichoma ina kawaida ya kusinyaa(ina kuwa midogo baada ya kuiva)
 Make sure the beef cube are in medium size because during baking may shrink and seemed smaller

4.Weka Viungo vilotajwa hapo juu kasoro mafuta na kerot
 Add all ingredients mentioned above except Carrot and Oil

5.Weka kwenye friji kwa lisaa au zaidi ili ipate kulainika
 Refrigerate them for an hour or more to tenderize your liver

6.Ukiitoa ichanganye vizuri
 Remove from the fridge and use your hand to mix them well

7.Katakata kerot kwa umbo la duara
 Slice the carrot in circle

8.Chukua Vijiti weka maini matatu yaachanishwe na kerot
 Skewer the beef keep 3 beef cube separate them with carrot in one stick

JINSI YA KUPIKA/HOW TO COOK
1.Weka jikoni kwa ajili ya kuichoma mi nimetumia Oven,ila unaweza kutumia jiko lolote
 Prepare to bake them,I used Oven to bake them,but you can grill them too

2.Panga kwenye chanya ya kuchomea kisha tumia brush kupaka mafuta mishkaki yako
 Brush them with cooking Oil 

3.Weka moto wa 150,moto wa juu na chini pika kwa dakika 20
 Set the Oven by 150'C the upper and lower heat for 20 minutes

4.Kisha igeuze paka mafuta tena ipike kwa dakika 15 tu
  After that time turn over to brush the other side and keep cooking  for 15 minutes to let the beef cooked evenly

5.Ikiiva weka sahanini unaweza kula yenyewe au na chakula chochote kama mikate,wali n.k.
 Serve with Chips,bread,rice when they are done

KABABU ZA NYAMA NA MIKATE (BEEF KABABS WITH BREAD)



MAHITAJI/INGREDIENTS
1.Nyama ya kusaga robo
 1/4kg Minced Beef

2.Kitunguu maji kikubwa kiasi 1
  1 medium size Onion

3.Vitunguu thomu punje kubwa 3
  3  Garlic Cloves 

4.Tangawizi kijiko cha chai 1(ilotwanga)
 1 Tea spoon minced Ginger

5.Pilipili ya kuwasha 1(au zaidi kama mpenzi wa pilipili)
 1 Chili Pepper or more

6.Ndimu 2
 2 Lemon

7.Pilipili manga ya unga nusu kijiko cha chakula
  1/2 Tbsp Black Pepper

8.Mdalasini wa unga nusu kijiko cha chakula
 1/2 Tbsp Cinnamon powder

9.Uzile(Binzari nyembamba) ya unga kijiko kimoja 
 1 Tbsp Cumin powder

10.Mayai 3
 3 Eggs

11.Chumvi kiasi
 Salt to taste

12.Mkate wa slice(2) au Boflo 1
 2 Slice of bread or Small bread

13.Mafuta ya kupikia nusu lita
 1/2 Litre of Cooking Oil

14.Pilipili hoho(Pilipili boga) ndogo 1
 1 Green pepper 

15.Karoti ndogo 1(ilioparwa)
 Grated carrots

16.Unga wa Sembe/wa Mchele robo kikombe
  1/4 Cup Maize/Corn Flour

17.Kebab Masala


MAANDALIZI/PREPARATION
1.Twanga kitunguu thomu,pilipili na chumvi na uviweke pembeni
   Grind the mixture of red chilli,salt and clove of garlic and keep it aside

2.Menya kitunguu maji,karoti
 Peel the onion,carrot

3.Kisha pasua kitunguu maji katikati na kisha kikate kwa urefu
 Cut the onion into halves and cut it into slice shape

4.Katakata Pilipili hoho
 Chop the Green Pepper 

5..Andaa kibakuli vunja mayai mawili weka na chumvi kidogo yachanganye na kijiko au umma na yaweke pembeni 
 Break two eggs in a small bowl add a pinch of salt and beat them with spoon or folk

6.Kamua Ndimu weka kwenye kibakuli
 Squeeze Lemon in a separate bowl to get lemon juice

7.Chukua mkate kama ni wa Boflo toa nyama ya ndani weka kwenye kibakuli roweka na vimaji kidogo acha urowane
 Take a bread and remove the crust and soak the crumb(inner white part) in a bowl with water

8.Kama ni slice ondoa ile wekundu wa kuiva unaozunguka slice chukua nyama ya ndani roweka kwenye maji
 If you use slice also remove the crust and soak the remaining part into the water

9.Mikate ikirowana ikamue maji yote mpaka ibaki nyama kavu weka pembeni
  After some time remove the crumb and squeeze by using your hand till get dried

JINSI YA KUPIKA
1.Weka nyama jikoni tia chumvi,ndimu usiweke maji acha itoe maji yenyewe hadi iwive
  In a medium heat cook the minced beef added salt and lemon juice till dry

2.Ikiiva epua nyama acha ipoe
  When its ready remove it from the stove and let it cool

3.Changanya nyama yako vizuri weka tangawizi,pilipili manga,mdalasini,uzile na uichanganye vizuri
 Then add ginger,black pepper,cinnamon,cumin in the cooked minced beef 

4.Weka kitunguu maji,karoti,pilipili hoho ulivyovikata weka kwenye nyama
 Add Chopped Onion,Carrot,Green Pepper

5.Weka Kebab masala na uchanganye mchanganyiko wako vizuri
 Add Kebab Masala and mix the mixture well

6.Weka nyama za mikate ulioikamua maji na endelea kuchanganya
 Add the dried crumb and keep mixing the mixture

7.Malizia kuweka yai moja kwenye nyama changanya vizuri mchanganyiko wako
  Break the remaining egg and add into the mixture and continue to mix till combined

8.Chukua nyama yako tengeneza umbo la maduara madogo kiasi mpaka umalize nyama yako.
  Take a small portion of a mixture and use your hand to make a round ball like meat balls

9.Weka mafuta kwenye karai yaache yapate moto sana mpaka yatoe moshi
  Heat the oil to a maximum 

10.Nyunyizia unga wa sembe kidogo sana kwenye kababu zako
   Sprinkle the corn flour/maize flour on top of the kebabs

11.Chukua maduara yako yachovye kwenye mayai kisha weka kwenye mafuta
  Soak the round balls into the beaten egg and add into the heated oil

12.Ziache dakika 3 kisha zigeuze na ziwache kidogo
   Leave for 3 minutes and turn into other side  

13.Zikiwa za brown zitoe weka kwenye chujio au tissue zichuje mafuta
  When they turn into golden brown remove them and take into sieve or tissue

14.Weka kwenye sahani inapendeza uweke na chatne wakati wa kula
  When they get dried serve with chatne(it recipe available in Urojo post)

15.Unaweza kula kababu zako na Chapati au mkate wowote ule.
  You can serve with bread,chapati,juice or as they are.

       1.Ili kababu zipendeze hakikisha zinachapuka viungo vizuri
           Marinate the mixture well to have good taste

      2.Mayai ya kuchovyea wakati wa kupikia yawe ya kutosha,unaweza kuwekamaji kidogo ukipenda
         Beat an enough egg for soaking the meat balls,you can add little water when needed

      3.Wakati wa kuzipika hakikisha mafuta yamepata moto haswaa
          Dont cook them if the oil is not heated well

      4.Zipike taratibu usizifanyie haraka kuzigeuza hakikisha zinapiga rangi ya brown ndio uzigeuze
        Dont turn into other side if the lower side is undone  

      5.Mafuta yasipopata moto vizuri kababu zinaweza kupasuka kwenye mafuta
          If you hurry to cook before the oil get heated well the kebab will break during frying 

      6.Ikiwa unashindwa kuviringisha kupata duara ongeza mkate wa slice ulioroekwa na kukamuliwa
         If you fail to get round ball soak one slice then dried it and add in the mixture till combined

JINSI YA KUPIKA CHAPATI LAINI

MAANDALIZI/PREPARATION
1.Kwanza hakikisha unakanda unga vizuri
 Make sure you knead the dough very well

2.Lazima unga uukande mpaka uwe laini sana
  The kneaded dough must be very soft

3.Baada ya kukata madonge ya idadi ya chapati unazo zitaka
 Divide the dough into any number you want

4.Wakati wa kusukuma tumia unga kuhakikisha unapata duara kubwa kiasi
  Sprinkle the plain flour onto the surface and roll the dough with rolling pin until you get bigger cycle

5.Yeyusha samli au blue band changanya na mafuta kupaka katika duara lako
  Mix the melted butter or ghee with cooking oil and brush on the top of the cycle

6.Kunja unavyopenda ila kumbuka jinsi unavyo ikunja ndio inatengeneza muonekano mzuri wa chapati
  Fold the chapati as you prefer but the chapati good looking depends on how you fold it

7.Baada ya kuziweka mafuta ni vizuri uziache kiasi cha dakika 10 mpaka 15 kabla ya kuzipika 
 After you fold them better to let them rest for atleast 10 to 15 minutes 

8.Sukuma chapati jitahidi upate duara zuri lenye shape ya kuvutia
  Roll the folded dough again to get a nice or perfect circular shape

9.Unapo sukuma chapati isiwe nyembamba wala nene sana iwe na upana wa kiasi
  Make sure it is neither too thin nor too thick

10.Chapati ikiwa nyembamba sana unapo ichoma huwa ina kakamaa na ikiwa nene sana huwa haiivi vizuri inaweza kuwa mbichi
 The thinner dough make chapati to be too crunchy after cooking and the thick chapati can result not to be cooked well inside 

JINSI YA KUPIKA/HOW TO COOK
1.Moto hapa ndio kwenye mambo yote ukikosea chapati nayo inaweza kuwa mbaya
  Heat you use is very important,if you fail to set the required heat and the Chapati will not be good

2.Moto ukiwa mdogo hupelekea chapati kunyonya mafuta
 If you set minimum heat the chapati will absorb oil

3.Moto ukiwa mwingi chapati huungua
 If the heat is high the chapati will be burnt

4.Weka moto wa wastani ili uivishe chapati yako taratibu
 Make sure you set the medium heat during cooking

5.Weka chuma jikoni pakaa mafuta kijiko kimoja
 Heat the pan and add 1 Tbsp of Oil

6.Weka chapati yako jikoni
 Add the Chapati into the pan

7.Iache kidogo sana yaani ikisha kubadilika kutoka ubichi tu geuza upande wa pili
 Leave it for some second before it forms the bubbles flip it to the other side

8.Acha iive mpaka ianze kufanya rangi za kuiva
  Then let the other side cooked evenly till makes golden colour

9.Usiache mpaka ikaungua
 Don't let it burnt

10.Izungushe zungushe kwenye chuma ili sehemu zote zipate ile rangi ya kuiva hasa nchani mwa chapati
 Use your hand to circulate your chapati around the pan so as the corners will cook well

11.Ikunje sehemu mbili sawa
  Fold the Chapati in half

12.Weka mafuta kijiko kimoja
 Add 1 Tbsp of Oil

13.Penyeza kijiko kati kati ya chapati
  Insert the spoon in between of the folded chapati 

14.Fanya kama unaigandamiza huku ukiisugua na chuma
 Press it with spoon around the pan

15.Ongeza mafuta kidogo izungushe chapati hadi upate rangi nzuri ya kuvutia
 Add the little oil and circulate it to get beautiful colour

16.Geuza upande wa pili rudia hatua ya 13 mpaka 16
 Turn the other side of folded chapati and repeat step 13 until 16

17.Ikunjue irudi kuwa duara
 Unfolded the chapati to be in circular shape

18.Acha ule upande wa nyuma ya chapati uive kidogo tu
 Let the white layer to cook evenly

19.Itoe malizia kuchoma chapati zilobakia kwa hatua hizo ziliopo juu
 Remove from the pan and finish the remained chapatis by following above steps

20.Njia hii ya upishi wa chapati hupelekea chapati kuchambuka wakati wa kuipika chapati
 If you cook chapati by this way it makes chapati softer while it is still in a pan

1.Ukikosea kukanda unga na kuwa mgumu na hizi njia za chini zote zitakataa kutoa chapati laini
 Make sure you knead the dough till soft otherwise the chapati will not be soft

2.Ni vizuri kupika upishi huu ukiwa huna haraka taratibu kupata chapati nzuri
Do not hurry in  preparing and cooking chapati so as to get soft one

3.Ni upishi unaohitaji mazoezi pika mara kwa mara hadi utaziweza
  Make sure you cook chapati frequently so as to get used with it

JUISI YA PARACHICHI NA MAZIWA YA UNGA (AVOCADO WITH MILK POWDER JUICE)


MAHITAJI/INGREDIENTS
1.Parachichi kubwa kiasi 1
 1 Medium Size Avocado

2.Maziwa Ya Unga Kikombe kidogo cha chai Nusu 
 1/2 Cup Milk Powder

3.Sukari Vijiko Vikubwa 5
 5 Tbsp Sugar

4.Arki ya Ice Cream Kiduchu
 Ice Cream Essence to taste

5.Maji ya Baridi Lita Moja na Nusu
 1.5 Litre Cold Water

6.Ndizi mbivu 1
 1 Ripen Banana

7.Ndimu Kipande 
 Small Piece Lemon

MAANDALIZI/PREPARATION
1.Osha Parachichi kwa maji safi Vizuri
  Rinse Avocado well with clean water 

2.Kisha limenye na toa kokwa(Tunda) la katikati ya parachichi 
  Peel it and remove the inner seed of avocado 

3.Kata vipande vidogo vidogo weka kwenye jagi la blenda
 Cut the avocado into small pieces and put them into blender jug

4.Menya Ndizi na katakata weka kwenye blenda
 Peel the banana and cut into pieces then add into jug too
 

JINSI YA KUANDAA/HOW TO PREPARE
1.Weka maziwa,sukari na maji kwenye jagi la blenda uliloweka parachichi na ndizi
 Add the milk,sugar and water in the jug has the mixture of avocado and banana

2.Saga mchanganyiko wako kiasi cha dakika 3
 Blend the mixture for at least 3 minutes

3.Weka arki na endelea kusaga kwa dakika 3 
 Add the Ice cream essence and keep blending the mixture

4.Malizia kwa kukamua ndimu na weka maji yake kisha saga kwa dakika 2 tu
 Finally squeze the lemon and add lemon juice in the mixture for 2 minutes

5.Mimina kwenye chupa weka katika friji ipate baridi kiasi usiache mpaka ikafanya barafu
  Pour in the jug or bottle refrigerate but make sure it does not freeze

6.Ikiwa na baridi nzuri unaweza kunywa na mkate au vileja ,keki n.k
 After getting cold you may serve with bread,cake etc

1.Parachichi lazima liwe gumu kidogo lisiwe laini sana
  Don't use rippen Avocado

2.Hakikisha haiwi nzito sana wala nyepesi sana itapoteza ladha yake 
 The juice consistence should neither be lighter nor heavier

3.Sio lazima kuweka ndimu
 Lemon juice is optional

4.Usiweke kwenye friza ikiganda itapoteza utamu
  Dont freeze the juice just refrigerate it

5.Usiongeze tunda jengine lolote
 Dont add any other fruit may change the taste

CHAI YA VIUNGO(SPICED TEA)

MAHITAJI/INGREDIENTS
1.Maji Lita 1
  1 Litre Water

2.Mdalasini mzima Vipande vikubwa 2
  2 Stick Cinnamon

3.Majani ya Chai kijiko cha chakula 1
  1 Tbsp Tea Leaves
 
4.Hiliki punje 5
 5 Cardamon Cloves
 
5.Tangawizi ilioparwa kijiko cha chakula 1
 1 Tbsp Grated Ginger

6.Sukari nusu kikombe cha Chai
 1/2 Cup Sugar

MAANDALIZI/PREPARATIONS
1.Mimina maji kwenye sufuria
 Pour some water on a big pan or pot

2.Twanga hiliki na sukari kiduchu
 Mix the seed of cardamon with a pinch of sugar and grind them to get cardamon powder

3.Weka Tangawizi,hiliki na mdalasini kwenye maji
 Add ginger,cardamon powder and cinnamon stick in a pan added water

JINSI YA KUPIKA/HOW TO COOK
1.Weka sufuria jikoni wacha maji yachemke sana
 Bring water to a full boil
 
2.Baada ya kuchemka vizuri weka majani na sukari
 Then add tea leaves and sugar
 
3.Acha yachemke kidogo kama dakika 3 epua
 Let it boil for 3 minutes more
 
4.Mimina kwenye chupa tumia kichujio kuchuja viungo na majani ya chai
 Pour the tea in a thermo use small sieve to filter the spice and tea leaves
 
5.Unaweza kunywa na kitafunio chochote kama chapati,keki,andazi n.k
 You Can serve with Bread,cake,cookies etc

1.Usiweke majani kama maji hayajapata moto vizuri hubadilisha ladha ya chai
 Dont add tea leaves if the water is not well boiled

2.Kama unapenda sukari nyingi unaweza weka zaidi ya hio hapo juu
 You can add more sugar if you like too much sugar in a tea

3.Usiweke majani ya chai mengi husababisha chai kuwa chungu
  Adding too much tea leaves lead the tea to become bitter

4.Usiache Chai Ichemke Muda mrefu baada ya kuweka majani
  Dont over boil after adding tea leaves
