8.Mafuta ya Kukaangia Lita 1
 1 Litre Cooking Oil

Shira/Sugar Syrup

1.Sukari Kikombe Kidogo 1

Uji wa Ngano Nzima/Whole Wheat Seeds Porridge

1.Ngano Nzima Kikombe Kikubwa 1
    1 Mug Whole Wheat Seeds

2.Maji ya Kuchemshia
    Water for Boiling

3.Hiliki nzima punje 10
    10 Cardamon 

4.Maji ya kupikia uji Lita 2
    2 Litre for Cooking the porridge

5.Unga wa ngano Kikombe Kikubwa 1
    1 Mug Plain Purpose Flour

6.Sukari Kikombe Kidogo 1
    1 Small Cup Sugar

MAANDALIZI/PREPARATIONS
Visheti
1. Chunga unga kwenye bakuli na changanya na vitu vyote vikavu yaani,sukari,chumvi
Hamira
   In a large bowl,sift the flour through a sieve. And mix with all dry ingredients remained; like yeast,sugar and salt.

2.Vunja yai weka kwenye mchanganyiko wako
  Break an egg and add it in the flour  mixture.

3.Mimina maziwa taratibu mpaka unga ushikane uweze kuukanda
  Add milk little by little amount until the mixture combine together

4. Kanda unga wako kiasi cha dakika 7
  Knead the dough for about 7 minutes

5.Weka Siagi kijiko 1 endelea kukanda kiasi cha dakika 2
  Add one table spoon of butter keep kneading for 2 minutes

6.Ukipata donge laini weka kwenye bakuli lipake kijiko cha siagi kilobakia kasha funika kwa kitambaa kisafi au plastic wrap katika sehemu ya joto na acha kiasi cha nusu saa au mpaka liumuke  vizuri.
  Once you get smooth dough, apply the remained butter on top of it and put it into a bowl and cover with plastic wrap or clean cloth and let it rise for around 30 minutes or till double in size.

8.Nyunyiza unga katika chombo cha kuekea visheti vyako
   Take a tray and add some flour into it

9.Likande donge lako kiasi cha dakika moja kisha kata madonge madogo madogo 16
   Knead the dough for around 1 minutes and divide into 16 small dough.

                  

10.Chukua donge moja ingiza vidole kati kutengeneza tobo mpaka upate umbo la duara lilitobolewa(Mfano kama Bangili)
   Take one dough and insert two fingers in it to get a circle with hollow space at the center
       
    

11.Kisha zungusha duara lako upande wa juu peleka kushoto na upande mwengine kulia mpaka kati pakutane upate umbo la namba8
   Twist your circle dough the upper side clock wise and the lower side anticlockwise till the center meet and form the number eight shape
             



12. Rudia kuzungusha kwa madonge 15 yaliyobakia mpaka uyamalize
   Repeat with all 15 dough remained
         
13.Vifunike sehemu ya joto acha viumuke kiasi cha dakika 20
      Cover them and let rise for 10 minutes






Uji /Poridge
1.Safisha ngano vizuri na uzioshe kasha weka kwenye sufuria na maji kiasi
  Remove all dirty particles in the wheat seeds than wash them well and keep in the pot with some water

2.Weka unga na maji kwenye bakuli na ukoroge kuondoa mabuje
 In a small bowl mix plain purpose flour and water, stir the mixture well to remove burbles

JINSI YA KUPIKA/HOW TO COOK

Visheti
1.Weka mafuta jikoni acha yapate moto kiasi
  Heat the oil to medium heat

2.Weka kisheti kimoja kimoja hakikisha huvipikwi sana vikibadilika rangi tu vitoe
  Add visheti and once they start to change it colour to golden brown take them out

3.Weka kwenye Tray ulioiweka tissue au chujio
  Add them to the sieve or on to the plate which you kept tissue in it

4.Acha vipoe kiasi cha dakika 10
  Let them cool at least for 10 minutes
                    
Shira/Sugar Syrup

1.Weka sukari,hiliki na maji kwenye sufuria
  Add sugar,cardamom and water into the large pot

2.Acha ichemke kiasi dakika 1 ongeza arki
  Let it boil for a minute and add essence

3.Wacha ichemke hadi ifanye mapovu na subiri dakika 3 kisha weka visheti vyako
  Once starting to form burbles wait for 3 minutes then add your visheti

4.Shika sufuria yako anza kuvipeta kasha rudisha jikoni acha kwa dakika 2
  Hold the end of the pot and flip it to throw Visheti inside the pot and then keep the pot away from the stove and then take it back to the stove for 2 minutes

5.Rudia hio hatua(4) mpaka sukari igande kwenye visheti vyako ifanye rangi nyeupe
  Repeat the above(4) procedure until Visheti coated with syrup and turn into white color

6.Acha Vipoe tayari kula na uji,kahawa au kinywaji upendacho
    Ready to serve with porridge,coffee or any drink  

Uji/Porridge
1.Chemsha ngano mpaka ziive na zikauke maji yote
    Bring to boil the wheat seeds until cooked and dry

2.Weka maji Lita moja kwenye sufuria acha yachemke
  Add 1 litre of water into separate pot let it boil

3. Mimina mchanganyiko wa unga na maji ulio ukoroga mwanzo kwenye maji yanayo chemka kasha koroga vizuri mpaka uchanganyike
  Pour the mixture of flour and water in the boiled water and stir well until mixed

4.Acha uji uchemke kiasi cha dakika 10 kisha weka tui
  Let the mixture boil for 10 minutes then add coconut oil

5.Baada ya dakika 5 weka sukari na hiliki na ngano koroga vizuri uji wako
  After 5 minutes add sugar ,boiled wheat seeds,cardamom and stir the mixture till combined

6.Acha kwa dakika 5 nyengine epua na uache upoe
  After another 5 minutes remove the porridge on to the stove and let it cool

7.Tayari kula na visheti,maandazi au mkate wowote uupendao
 Ready to serve with Visheti,Andazi or any type of bread 



Angalizo;Note;
1.Unaweza kukandia tui badala ya maziwa na visheti vikawa vizuri tu
  You can use coconut milk for kneading the Visheti dough instead of milk

2.Uji ukiwa mzito unaweza kuongeza maji ukiwa jikoni ukauzimua
  If the porridge is too heavy and some water to dilute it before remove it from the stove

3.Unaweza kuweka aina moja ya arki au hata aina tatu tofauti kwenye shira
    You can add one type of essence in sugar syrup or up to three different types

4.Ukiona visheti vimegandana sana usishtuke endelea kuvipeta kwa nguvu kidogo kisha virudishe jikoni mpaka sukari igande 
  Once you see the Visheti glued together keep flipping them and take the pot back to the heat till the syrup coat them 

5.Hakikisha mafuta unayopikia Visheti hayana harufu yoyote mfano (yasinukie alizeti) na masafi yasiwe yamepikiwa chochote

 The Oil used for frying must be clean i.e never used before and not imparting any flavor or smell.

BANZI LA TUI LA NAZI(COCONUT MILK BREAD ROLLS)


MAHITAJI/INGREDIENTS
1.Unga wa Ngano Nusu(1/2 Kg)
 1/2Kg All Purpose Flour

2.Tui la Nazi Kikombe Kidogo 1
1 Cup Coconut Oil

2.Samli Vijiko Vikubwa 2
 2 Tbsp Ghee

3.Sukari Vijiko Vikubwa 3
 2 Tbsp Sugar

4.Chumvi Kijiko cha Chai 1
 1 Tea Spoon Salt

5.Hamira Vijiko Vikubwa 2
2 Tbsp Dry Yeast

6.Ufuta Vijiko Vikubwa 2
 2 Tbsp Sesame seeds

7.Mafuta Kijiko Kikubwa 1
 1 Tbsp Cooking Oil

8.Yai Kubwa 1
 1 Large Egg


MAANDALIZI/PREPARATION
1.Weka hamira,unga kijiko 1,sukari kijiko 1,chumvi kiduchu na tui la nazi vijiko 3 kwenye kibakuli au kikombe acha kwa dakika 5 iumuke
 In a small ball/cup add dry yeast,pinch of salt,1 tbsp flour,1 tbsp sugar and 3 tbsp coconut milk mix them and let it rise for 5 minutes

2.Vunja yai kisha litenganishe ute mbali na kiini mbali
 Break an egg and seperate it from egg yolk and egg white

3.Katika bakuli kubwa weka unga,sukari,chumvi na kiini cha yai kisha changanya vizuri sana
 In a large bowl mix the remaining flour,salt,sugar,egg yolk till mixed

4.Changanya hamira ilioumuka pamoja na unga
 Pour the risen yeast in the flour mixture

5.Weka tui kidogo kidogo mpaka unga ushikane uwe donge moja 
  Pour the coconut milk slowly until you get a fine dough

6.Kanda unga kiasi cha dakika 10 kisha weka samli kijiko 1 endelea kukanda hadi uwe mlaini
 Knead the dough for at least 10 minutes then add a tbsp of ghee and keep kneading till soft

7.Ukusanye uwe donge moja la duara na pakaa samli donge lote hadi lienee
 Keep the dough into circle and apply the remaining ghee on top of it

8.Funika unga kwa kitambaa kisafi kisha uache uumuke kwa dakika zisizo pungua 20.
 Cover the dough and let it rise for 20 minutes

9.Ukande tena kidogo kisha kata madonge nane yafanye yawe duara
 Slightly knead the dough and then cut it into 8 pieces and roll them into ball shape

10.Chukua chombo cha kuokea kipake mafuta
 Grease the baking tray with some oil

11.Panga madonge na hakikisha unaacha nafasi baina yao aacha yaumuke kwa muda wa dakika 30 
 Place the dough in the baking tray make sure you leave a space between them and let the balls rise for 30 minutes

12.Baada ya kuumuka pakaa kiini cha yai juu ya madonge yako na nyunyizia ufuta
  Apply egg white on top of the balls and sprinkle the sesame seeds

JINSI YA KUPIKA/HOW TO COOK
1.Washa jiko la umeme moto wa 180
 Heat the oven 180'C

2.Oka banzi zako kwa muda wa dakika 20
 Bake them for 20 minutes

3.Zikiiva toa kwenye jiko na uzipake mafuta
 Remove them from the oven and apply some oil on top of the balls

4.Acha zipoe tayari kwa kuliwa na kinywaji upendacho
 Let them cool you can serve with any drinkyou prefer

Angalizo:Note;
1.Ili banzi ziwe lainii hakikisha unakanda unga hadi unakuwa mlainii kabisa
 Make sure you knead the dough till soft so as to get very soft bread

2.Banzi nzuri lazima ziachwe ziumuke zaidi ya nusu saa
 Make sure you give them enough time to rise before bake them

3.Kama jiko lako linaunguza hakikisha unaweka moto wa wastani kulingana na jiko lako
 Set the oven heat according to your oven to avoid the bread to get burnt

4.Unaweza kupika za chumvi tu, unaweka chumvi kijiko cha chakula kimoja bila kuweka sukari na kiini chai,mahitaji yalobakia unaweka kama hapo juu yalivyo orodheshwa
 You can make them by using salt only,by adding one table spoon of salt and all ingredients mentioned above except sugar and egg yolk.

5.Kwa wanaotumia mkaa unaweza kuoka kwa mkaa pia
  You can bake them by using Charcoal stove

6.Mafuta yanayopakwa baada ya banzi kuiva lazima yasiwe na harufu yoyote
  Oil applied on top of buns must be free from bad smell 

7.Unaweza kupaka siagi kama mbadala wa mafuta baada ya kuzitoa jikoni
   You can apply butter instead of cooking oil once it is taken from the oven

MIKATE YA MAZIWA (MILK BREAD)



MAHITAJI/INGREDIENTS
1.Unga wa Ngano 550gm
  Plain Purpose Flour 550gm

2.Maziwa 300ml
 Milk 300ml

3.Sukari Vijiko 4
 Sugar 4 Tbsp

4.Hamira Vijiko 2
  Yeast 2 Tbsp

5.Chumvi Kijiko Cha Chai 1/2
  Salt 1/2 Tea Spoon

6.Mayai 2
 Eggs 2

7.Maziwa ya Unga Vijiko 2
  Milk Powder 2

8.Ufuta Kijiko 1
  Sesame seeds 1 Tbsp 

9.Siagi Vijiko 2
   Butter 2 Tbsp

10.Unga wa Kusukumia 1/2 Kikombe
   Flour for rolling dough 1/2 Cup

MAANDALIZI/PREPARATIONS
1.Kwenye bakuli changanya unga,maziwa ya unga,sukari,chumvi na hamira
  In a big bowl add flour,milk powder,salt,sugar and yeast 

2.Tumia mwiko kuchanganya vizuri
  Mix all ingredients in a bowl with spartula

3.Ongeza yai moja,siagi na maziwa ya maji
  Add an egg,butter and milk 

4.Kanda unga mpaka uwe mlaini na unavutika
  Mix all and knead the dough till elastick

6.Ufunike uache uumuke vizuri
  Cover the bowl let it rise till double in size

7.Ukisha umuka toa kwenye bakuli ukande kidogo mpaka hewa yote itoke
  Fold the dough until all the air is removed

8.Kata kata donge lako kupata vipande vilivyo sawa na yafanye kuwa maduara
  Spilt the dough into equal pieces and form into round ball

9.Chukua unga mkavu sukuma madonge kwa urefu kisha yazungushe kuanzia ncha ya kwanza hadi ya mwisho
  Use the flour remain and sprinkle to the surface and flatten the balls into long dough then roll it starting from the first end to the last end

10.Rudia kwa madonge yote yalobakia
  Repeat till you finish all balls

11.Paka trei yako mafuta au siagi
  Grease the tray

12.Panga mikate yako
  Keep the bread into the tray 

13.Vunja yai lilobakia na pakaa mikate yako
  Break the egg remain and brush it on the surface of the bread

14.Nyunyizia ufuta mikate yako acha iumuke kwa dakika 20
  Sprinkle the sesame seeds and let them raise for 20 minutes

JINSI YA KUPIKA/HOW TO COOK
1.Washa Jiko la umeme moto wa juu na chini 180'C
  Heat the oven 180'C

2.Oka mikate kwa muda wa dakika 20 mpaka 30
  Bake them for 20 to 30 minutes 

3.Ikiiva itoe jikoni acha ipoe na itoe kwenye trei yake
  When they are ready remove them from the oven let them cool and unmold from the tray

4.Weka kwenye sahani paka siagi tayari kula na kinywaji upendacho 
  Apply butter after that they are ready to serve with any drinks

MAANDAZI YA KUOKA(MAANDAZI MAKAVU) BAKED ANDAZI




MAHITAJI/INGREDIENTS
1.Unga wa ngano nusu
Flour 1/2 Kg

2.Sukari Kikombe cha Rice Cooker 1
  Sugar 1 Cup of Rice Cooker

3.Hiliki punje 10
 10 pieces Cardamon
 
4.Samli ya Aseel kijiko 1 cha chakula
  1 Tbsp Aseel Ghee

6.Tui la nazi glasi ndogo 1
  1 Glass Coconut Milk

7.Hamira Pakti 1
  1 Packet Yeast

MAANDALIZI/PREPARATIONS
1.Chekecha unga kwa kutumia chungio kwenye chombo utacho kandia unga wako kisha punguza unga nusu kikombe weka pembeni.
    In a big bowl sift flour and remove a half cup of it and set aside

2.Chukua kikombe kingine weka hamira,sukari kijiko 1,unga kijiko 1 na tui vijiko 3 iache kwa dakika 3 mpaka ifure.
  In an empty cup add yeast,1 Tbsp of sugar,1 Tbsp flour and 3 Tbsp coconut milk and let it rise

3.Twanga hiliki baada ya kuzimenya kisha weka kwenye unga unaotaka kuukanda
 Grind peeled cardamon and add them into the bowl having flour

4.Chukua unga ulio uweka hiliki,weka sukari na samli kisha changanya kwa mkono vizuri.
   Add ghee and sugar into the flour and mix it well with your hand

5.Chukua hamira ilio umuka changanya kwa mkono vizuri na unga wako 
    Add raised ghee into the flour mixture and keep mixing 

6.Malizia kwa kumimina tui lako kidogo kidogo na uanze kuukanda utakapo kuwa donge moja.
    Finally pour coconut milk little by little into the flour mixture until you get a dough

7.Kanda unga kwa dakika 10 mpaka uwe mlaini kisha ufunike vizuri au uweke kwenye container na uufunike ili usipitishe hewa uache kwa dakika 5 kwenye sehemu ya joto.
   Knead the dough at least for 10 minutes until soft then cover it for 5minutes let it rise in double size 

8.Ukiumuka kata madonge na uyasukume kwa kutumia unga mkavu upate duara ila lisiwe nene sana wala jembamba sana,kisha kata maandazi yako kwa shape ya pembe tatu.
 Than cut into medium dough and roll it out to get a circle after sprinkle the flour on to the surface,then cut the circle into four rectangular pieces(maandazi) 

9.Weka unga mkavu kwenye tray na ueneze kisha panga maandazi unayotaka kuoka 
 Sprinkle the remained flour on the tray and add the maandazi into the tray
   
10.Yaache maandazi yako yaumuke kwa dakika zisizo pungua 20.
    Let them rise for 20 minutes

JINSI YA KUPIKA/HOW TO COOK
1.Washa Oven Moto wa juu na chini 140'C
  Heat the oven 140'C(Upper and Lower Heat) 

2.Pika Maandazi yako kwa muda wa dakika 20 tu
   Bake them for 20 minutes only

3.Yakianza Kupiga rangi ya dhahabu yatoe kama yanavyoonekana kwenye picha ya chini
    When turn into golden colour remove them into the oven as seen in the picture below

4.Acha yapoe kidogo toa weka kwenye sahani
   Let them cool and take them into the plate

5.Tayari kwa kula na Maharage,mboga,mchuzi,chai au kinywaji chochote 
    Ready to serve with Cooked Beans,Source,Tea or any other drinks



                    



Angalizo:Note
1.Hakikisha unga unaukanda vizuri hadi unakuwa mlaini ili maandazi yawe laini pia
   Make sure the dough is too soft to have soft andazi

2.Kama maandazi mengi hifadhi kwenye kontena ili mpaka siku ya pili yawe malaini
   You can keep cooked maandazi into tight container to remain soft for more than one day

3.Hakikisha yanaumuka vizuri kabla ya kuyaoka
   Let them rise well enough before baking them

4.Unaweza kuoka kwenye mkaa pia kama huna oven
   You can also bake them by using coal stove

5.Unaweza Kutumia samli yoyote kama huna ya Aseel au tumia siagi ukikosa samli
   You can use any type of ghee or butter instead of Aseel Ghee

6.Fuata maelezo na vipimo vizuri ili kupata maandazi mazuri kama yanavyoonekana kwenye picha
   Make sure you follow the exactly measurement,ingredients and instructions to get nice Andazi

MIKATE YA KOPA (LOVE BUNS)



MAHITAJI/INGREDIENTS
Mikate/Buns
1.Unga wa Ngano 400gm
 400gm Plain Flour 

2.Chumvi  Kijiko Cha Chakula 1/2
 1/2 Tbsp Salt

3.Hamira Kijiko Cha Chakula 1 1/2
1 1/2  Tbsp Yeast

4.Maziwa Kikombe kidogo Cha Chai 1
 1 Small Cup Milk

5.Sukari  Kijiko Cha Chai 1/2
 1/2 Tea spoon Sugar

6.Siagi Vijiko Vya Chakula 2
  2 Tbsp Butter

7.Kiini cha Yai 1
 1 Egg Yolk

8.Unga wa ngano nusu kikombe kwa ajili ya kusukumia
 1/2 Cup Flour for rolling out the dough

Samaki/Fish
1.Samaki Nguru Kipande kikubwa 1
 1 Large Piece King Fish

2.Pilipili Boga(Pilipili Hoho) 1
 1 Green Pepper

3.Keroti 1
 1 Carrot

4.Chumvi  Kijiko Cha Chakula 1
 1  Tbsp Salt

5.Ndimu zilokamuliwa 2
  Lemon juice(2 Lemon)

6.Fish Masala Kijiko Cha Chakula 1
 1 Tbsp Fish Masala

7.Pilipili Manga Kiduchu ya unga
  A pinch of Black Pepper powder

8.Kitunguu thomu punje kubwa 1
 1 Cloces of Garlic

9.Pilipili ya kuwasha 1
 1 Red Chilli

10.Uzile(Binzari Nyembamba) ya unga Kijiko Cha Chakula 1
 1 Tbsp Cumin Powder

MAANDALIZI/PREPARATIONS
Samaki/Fish
1.Osha kipande cha samaki weka kwenye sufuria
 Rinse well the piece of fish and keep it in the pan

2.Twanga Pilipili na kitunguu thomu
 Grind the mixture of red chilli and garlic

3.Para keroti kwenye kibakuli
 Grate a carrot in a separate bowl and keep it a side

4.Katakata pilipili hoho ndogo ndogo
 Chop the green pepper  in a separate bowl and keep it a side

Mikate/Buns
1.Kwenye Kikombe kitupu changanya Hamira,sukari,unga kijiko 1 na maziwa vijiko 3 acha iumuke
 In an empty cup add yeast,sugar,1 Tbsp flour and 3 Tbsp milk and let it rise

2.Kwenye bakuli weka unga chumvi na siagi changanya kwa mkono hadi ichanganyike
 In a separate bowl add flour and butter then use your hand to mix them well

3.Kisha mimina hamira ilioumuka changanya vizuri
 Pour the raised yeast and keep mixing

4.Mimina maziwa kidogo kidogo mpaka upate donge moja
 Pour the milk little by little to get a dough

5.Kanda unga hadi uwe mlainii
 Knead the dough till soft

6.Acha uumuke kwenye sehemu ya joto kiasi dakika 40
 Leave it for 40 minutes to rise until double or triple in size

7.Ukiumuka kata madonge 5
 Then cut into 5 dough

8.Kisha fuata hatua nilizozieleza kwa picha hapo chini
 Then follow the below procedures




9.Chovya donge lako kwenye unga mkavu na usukume kwa urefu sio duara kama picha inavyoonekana
 Take a dough into plain flour  and roll out to get a dough of long shape not circular one as shown at the image above 

10.Kisha kunja donge lako kutoka ncha ya mwisho kueleka mwanzoni
 Roll the first end towards the last ends

11.Utapata umbo la urefu kama hivyo
 You will have this shape

12.Uvute nchani ili likae sawa kama hivyo
 Pull each ends to get clear rope shape

13.Chukua kisu chana karibia na nchani mpaka mwisho wa upande wa pili kama linavyo onekana
 Use a knife to slice the dough starting nearly to the first end points

14.Kunja upande mmoja kuelekea kati
Bring each ends to the center

15.Malizia upande wa pili kupata umbo la kopa
Bring the other ends to get that heart shape

16.Chota samaki weka katikati ya kopa lako.Jinsi ya kutengeneza samaki nimeelezea chini hapo
 Take the fish mixture by using spooon and add the mixture to the center of the heart.I hace explained on how to make fish mixture in cooking part

17.Weka kwenye trei acha yaumuke kwa dakika 10
 Put them into the baking tray and let them rise for 10 minutes

18.Piga kiini cha yai kisha yapake
 Beat the egg yolk and apply on top of the buns


JINSI YA KUPIKA/HOW TO COOK
Samaki/Fish
1.Weka ndimu na chumvi kwenye samaki
 Add salt and lemon juice into the pan having fish

2.Mchemshe hadi aive abakie na vimaji kiduchu sana
 Bring to boil but don't let it dry ,has to be moist

3.Muepue acha apoe kisha mtoe miba
 Remove from the stove and let it cool

4.Weka Pilipili na kitunguu ulivyo vitwanga
 Add the mixture of garlic

5.Weka na keroti na Pilipili boga kisha changanya vizuri
 Add the carrots and green pepper

6.Malizia kuweka Uzile,pilipili manga na fish masala
 Then add cumin powder,black pepper and fish masala

7.Endelea kumchanganya vizuri weka pembeni
 Mix the mixture very well and keep it aside

8.Onja chumvi kama ipo sawa endelea na hatua nyengine
 Check the salt you can add if it is not enough

Mikate/Buns
1.Oka kwa moto wa 150 kwa dakika 30 mpaka 40
 Bake the buns for 30 to 40 minutes

2.Yakiiva acha yapoe na yapoe weka kwenye sahani
 When they are done let them cool and add to the plate

3.Unaweza kula na Chai,juice au kinywaji upendacho
 You can serve with juice or any drinks


Angalizo:Note
1.Unaweza kuweka nyama,mbogamboga au hata mitupu bila ya samaki,nyama au mboga mboga
 You can add minced meat or vegetable or nothing on top instead of fish

2.Ikiwa hujaweka chochote ifanye ya sukari badala ya chumvi
 If you add nothing on top it is preferable to use sugar during preparation to have sugar taste

3.Hakikisha unga umekandwa hadi kuwa mlaini kabisa
 Knead the dough till completely soft

4.Usiipike sana inakuwa migumu ikisha kupiga rangi ya dhahabu itoe
 Don't over cook them when they turn into golden colour remove from the oven

5.Usiache ikaumuka kupitiliza baada ya kuweka samaki hupelekea kupoteza umbo lake
 Do not let double or triple raised after you add fish on top

JINSI YA KUPIKA CHAPATI LAINI

MAANDALIZI/PREPARATION
1.Kwanza hakikisha unakanda unga vizuri
 Make sure you knead the dough very well

2.Lazima unga uukande mpaka uwe laini sana
  The kneaded dough must be very soft

3.Baada ya kukata madonge ya idadi ya chapati unazo zitaka
 Divide the dough into any number you want

4.Wakati wa kusukuma tumia unga kuhakikisha unapata duara kubwa kiasi
  Sprinkle the plain flour onto the surface and roll the dough with rolling pin until you get bigger cycle

5.Yeyusha samli au blue band changanya na mafuta kupaka katika duara lako
  Mix the melted butter or ghee with cooking oil and brush on the top of the cycle

6.Kunja unavyopenda ila kumbuka jinsi unavyo ikunja ndio inatengeneza muonekano mzuri wa chapati
  Fold the chapati as you prefer but the chapati good looking depends on how you fold it

7.Baada ya kuziweka mafuta ni vizuri uziache kiasi cha dakika 10 mpaka 15 kabla ya kuzipika 
 After you fold them better to let them rest for atleast 10 to 15 minutes 

8.Sukuma chapati jitahidi upate duara zuri lenye shape ya kuvutia
  Roll the folded dough again to get a nice or perfect circular shape

9.Unapo sukuma chapati isiwe nyembamba wala nene sana iwe na upana wa kiasi
  Make sure it is neither too thin nor too thick

10.Chapati ikiwa nyembamba sana unapo ichoma huwa ina kakamaa na ikiwa nene sana huwa haiivi vizuri inaweza kuwa mbichi
 The thinner dough make chapati to be too crunchy after cooking and the thick chapati can result not to be cooked well inside 

JINSI YA KUPIKA/HOW TO COOK
1.Moto hapa ndio kwenye mambo yote ukikosea chapati nayo inaweza kuwa mbaya
  Heat you use is very important,if you fail to set the required heat and the Chapati will not be good

2.Moto ukiwa mdogo hupelekea chapati kunyonya mafuta
 If you set minimum heat the chapati will absorb oil

3.Moto ukiwa mwingi chapati huungua
 If the heat is high the chapati will be burnt

4.Weka moto wa wastani ili uivishe chapati yako taratibu
 Make sure you set the medium heat during cooking

5.Weka chuma jikoni pakaa mafuta kijiko kimoja
 Heat the pan and add 1 Tbsp of Oil

6.Weka chapati yako jikoni
 Add the Chapati into the pan

7.Iache kidogo sana yaani ikisha kubadilika kutoka ubichi tu geuza upande wa pili
 Leave it for some second before it forms the bubbles flip it to the other side

8.Acha iive mpaka ianze kufanya rangi za kuiva
  Then let the other side cooked evenly till makes golden colour

9.Usiache mpaka ikaungua
 Don't let it burnt

10.Izungushe zungushe kwenye chuma ili sehemu zote zipate ile rangi ya kuiva hasa nchani mwa chapati
 Use your hand to circulate your chapati around the pan so as the corners will cook well

11.Ikunje sehemu mbili sawa
  Fold the Chapati in half

12.Weka mafuta kijiko kimoja
 Add 1 Tbsp of Oil

13.Penyeza kijiko kati kati ya chapati
  Insert the spoon in between of the folded chapati 

14.Fanya kama unaigandamiza huku ukiisugua na chuma
 Press it with spoon around the pan

15.Ongeza mafuta kidogo izungushe chapati hadi upate rangi nzuri ya kuvutia
 Add the little oil and circulate it to get beautiful colour

16.Geuza upande wa pili rudia hatua ya 13 mpaka 16
 Turn the other side of folded chapati and repeat step 13 until 16

17.Ikunjue irudi kuwa duara
 Unfolded the chapati to be in circular shape

18.Acha ule upande wa nyuma ya chapati uive kidogo tu
 Let the white layer to cook evenly

19.Itoe malizia kuchoma chapati zilobakia kwa hatua hizo ziliopo juu
 Remove from the pan and finish the remained chapatis by following above steps

20.Njia hii ya upishi wa chapati hupelekea chapati kuchambuka wakati wa kuipika chapati
 If you cook chapati by this way it makes chapati softer while it is still in a pan

1.Ukikosea kukanda unga na kuwa mgumu na hizi njia za chini zote zitakataa kutoa chapati laini
 Make sure you knead the dough till soft otherwise the chapati will not be soft

2.Ni vizuri kupika upishi huu ukiwa huna haraka taratibu kupata chapati nzuri
Do not hurry in  preparing and cooking chapati so as to get soft one

3.Ni upishi unaohitaji mazoezi pika mara kwa mara hadi utaziweza
  Make sure you cook chapati frequently so as to get used with it

MAANDALIZI
1.Kuna nazi na chuja kwenye chombo ujazo wa jagi dogo la maji
2.Chekecha unga wako vizuri kwenye bakuli safi
3.Weka chumvi na uchanganye unga vizuri kisha weka tui kidogo kidogo huku ukichanganya kwa mkono
4.Endelea kuweka tui mpaka unga uwe kama uji uji sio mzito sana wala mwepesi sana
5.Acha kuweka tui fanya kama unaupiga piga makofi kutoa mabuje na mabonge kwa muda wa dakika 10
6.Uache unga wako ufure na uumuke vizuri

JINSI YA KUPIKA
1.Andaa jiko la mkaa lenye moto wa wastani
2.Weka maji na chumvi kidogo kwenye kibakuli kinachoweza kuingia mkono
3.Chukua chuma(Frying pan) cha kupikia ufuta weka mkono kwenye maji ya chumvi kisha fanya kama unakungutia maji yaloganda kwenye mkono katika chuma chako
4.Chota kwa mkono uji wako weka kama mikono miwili ya uji kwenye chuyma cha mkate
5.Kiweke jikoni kisha chukua ufuta kiasi nyunyizia juu ya ule uji kwenye chuma chako
6.Acha kwa dakika 3 ukiona unaanza kubadilika kuwa na weupe wa kuiva kwa chini geuza chuma cha mkate juu chini kama unataka kuumwaga mkate
7.Weka chuma hivyo hivyo huku ukiuangalia mkate wako usiungue
8.Ukiwa wa brown geuza chuma kisha tumia kisu kutoa mkate wako
9.Weka kwenye sahani chukua brush chovya kwenye mafuta kisha upake mkate wako kwa kupakaa mafuta kidogo tu
10.Rudia njia hizo hapo juu mpaka umalize uji wako wote.

1.Hakikisha unatumia vyuma vya bati(Frying pan za Bati) vinavyotengenezwa Tanzania ndio vya kupikia mikate ya ufuta ukitumia chuma kingine mkate utaanguka kwenye moto
2.Pia mkate huu unapikwa kwa kutumia jiko la mkaa au wengine wanatumia grill
3.Tumia moto wa wastani kupata rangi ya kuvutia mkate ukiungua hup[oteza rangi ya mvuto na ladha hubadilika

4.Halkikisha huzidishi chumvi wakati wa kupika hufanya mikate kuwa mibaya
