KUKU WA TANDOORI(TANDOORI CHICKEN)


MAHITAJI/INGREDIENTS
1.Kuku Mzima
 A whole Chicken

2.Tandoori(Rangi Nyekundu ya Unga) Robo Kijiko Cha  Chai 1
   1/4 Tea spoon Tandoori Powder

3.Chumvi Kiasi
  Salt to taste

4.Vinegar  Vijiko  Vya  Chakula  2
  2 Tbsp Vinegar  

5.Pilipilili ya kutwangwa  Kijiko  Cha  Chakula 1
  1 Tbsp Minced Red Pepper

6.Pilipili Manga kijiko Cha Chai 1
  1 Tea spoon Black Pepper

7.Mtindi  Robo Kikombe  Cha Chai
  1/4 Cup Plain Yogurt

8.Mafuta  ya Alizeti Vijiko Vya  Chakula 3
  3 Tbsp Sun Flower Oil

9.Tangawizi ilotwangwa Kijiko Cha Chakula 1
  1 Tbsp Grated Ginger

10.Kitunguu Thomu kilotwangwa Kijiko Cha Chai 1
 1 Tea spoon minced Garlic

11.Chicken Masala Kijiko Cha Chakula 1
 1 Tbsp Chicken Masala

12.Uzile(Binzari Nyembamba) kijiko Cha Chai 1
 1 Tea spoon Cumin seeds

MAANDALIZI/PREPARATION
1.Mkate Kuku  vipande  viwili sawa
  Slip the chicken into two halves

2.Muoshe vizuri kwa maji safi
 Rinse the halves well with clean water

3.Muweke Viungo vilotajwa hapo juu kasoro mafuta
 Marinate them well by adding the ingredients except oil

4.Vaa gloves za plastik waeneze vizuri viungo hadi wakolee
  Use plastic gloves to marinate them well

5.Weka kwenye friji kiasi cha masaa mawili au Zaidi
  Put them in the fridge atleast two hours or more

6.Ukiwatoa wamiminie mafuta waeneze vizuri na weka tayari kwa ajili ya kuwapika
  Remove from the fridge and pour the oil onto them 

JINSI YA KUPIKA/HOW TO COOK
1.Washa Oven Moto Nyuzi 180,weka moto wa juu na chini 
  Heat the oven by 180'C set the upper and lower heat

2.Weka kuku wako na wapike kwa saa moja(Dakika 60)
  Bake the Chicken for atleast an hour(60 minutes)

3.Kama jiko halina moto mkali usifungue jiko mpaka lisaa limalize
  If your oven heat is controllable don't open it,till the chicken are done

4.Baada ya lisaa kama hawajaiva vizuri pika tena kwa dakika 10 tu
  If you see they are not cooked well for an hour cook them for 10 minutes more

5.Baada ya huo muda wapo tayari kula na Chipsi au Wali
  After that time they are ready to serve them with chips,rice

Angalizo:
1.Kama jiko lina moto mkali pika kulingana na moto wa wastani wa jiko lako
 If your Oven is uncontrollable set the degree according to your Oven

2.Unaweza kumuweka kwenye friji  zaidi ya masaa 6 au siku nzima
  You can refrigerate them for 6 hours or a day 

3.Ikiwa jiko lako lina uwezo wa kuseti muda ni vizuri uweke muda wa lisaa kuepuka kufungua jiko mara kwa mara kwani husababisha joto kupotea
 If your Oven has timer better to set so as to avoid to loose heat when opening the ovening door

4.Unaweza kuweka Tandoori Zaidi kama utapenda kuku wako awe mwekundu Zaidi.
  You can add more Tandoori powder if you prefer dark red chicken

5.Unaweza Kumpika kwenye jiko la mishkaki kama hauna oven.
  You can bake in Grill or Barbeque stove if you dont have an Oven

SHRIMPS RICE(WALI WA KAMBA)


MAHITAJI/INGREDIENTS

1.Kamba wakubwa kiasi 30
 30 Medium size shrimps

2.Mchele Kikombe Kimoja
 1 Cup uncooked rice

3.Keroti kubwa 1
 1 Carrot

4.Pilipili Boga kubwa 1
 1 Medium size Green Pepper

5.Kitunguu kikubwa 1
  1 Medium size Onion

6.Ndimu ilokamuliwa kijiko 1
 1 Tbsp Lemon juice

7.Pilipili inayowasha 1
 1 Red Chilli

8.Kitunguu punje kubwa 1
 1 Garlic Clove

9.Chumvi kiasi
 Salt to taste

10.Fish Masala kijiko kidogo 1
 1 Tea spoon Fish Masala

11.Mafuta robo kikombe
 1/4 Sun Flower Oil

12.Tangawizi Ndogo sana
 1 small Piece Fresh Ginger

13.Uzile(Binzari Nyembamba) kijiko cha chai 1
  1 Cumin seeds Tea spoon

14.Nyanya(Tungule) 1
  1 Fresh Tomato

MAANDALIZI/PREPARATION

1.Chukua kamba waoshe vizuri kisha watoe magamba yao yote
  Wash well the shrimps and peel them well

2.Menya Kitunguu thomu na tangawizi
   Peel the ginger and clove of garlic then wash them

3.Twanga kitunguuu thomu,tangawizi,pilipili na chumvi kwa kutumia mchi na kinu
 Grind the mixture of ginger,red chilli,salt and clove of garlic I do use (mortar and pestle)

3.Waweke kwenye bakuli dogo na waunge vizuri kwa kuwaweka viungo ulivyovisaga
  Marinate them by adding the mixture you grind in step 2

4.Weka Ndimu,Masala na Uzile kisha wachanganye vizuri 
  Finally add Masala,Lemon juice and cumin seed then mix them well

5.Chambua mchele na uoshe vizuri weka pembeni
 Remove the unwanted particle in rice and wash it well

6. Para keroti kisha kata vipande vikubwa kiasi vya Kitunguu maji 
  Grate the Carrots and by using sharp knife chop the onion into medium size

7. Toa mbegu za kati za Pilipili hoho kisha ikate vipande kwa urefu
     Remove the inner seeds and chop it into little sticks

8.Para nyanya weka pembeni
  Grate the tomato and set a side

9.Weka maji kwenye sufuria na chumvi 
  Add water and salt into pot

JINSI YA KUPIKA/HOW TO COOK

1.Weka maji jikoni yakipata moto pika wali mpaka uive
  Bring the water to a full boil and cook the rice until cooked

2.Weka karai na mafuta yakichemka kaanga kitunguu mpaka kiwe brown kiasi
  Add the oil into the pan and when heat fry the onion till light brown

3.Weka pillipili hoho kaanga kidogo mpaka zitoe harufu tu usikaange sana kama kitunguu maji
 Add the green pepper fry till smell dont over cook like onion

4.Malizia keroti nazo ziache kidogo tu
  Add grated carrot and keep frying

5.Weka wale kamba na koroga mpaka wabadilike rangi na kuwa na rangi ya dhahabu
    Add marinated shrimps and steer the mixture till the shrimps turn to golden colour

6.Malizia kuweka nyanya na chumvi kidogo sana
 Finaly add grated tomato and a pinch of salt

6.Koroga acha kwa dakika 1
 Steer the mixture and leave it for 1 minute

7.Mimina wali ulio upika mwanzo kwenye mchanganyiko wa kamba
  Add the cooked rice in the shrimps mixture

8.Uchanganye kisha ufunike uache ukauke kwa kiasi cha dakika 5
  Mix well and cover it to get dried for 5 minutes

9.Baada ya muda huo pakua unapendeza kuliwa na juice au soda.
  When its ready you you can serve with juice or soda

1.Usiweke mafuta mengi wakati wa kukaanda
 Do not add too much oil when frying

2.Usiongeze pilipili unaweza kuwasha watoto wakashindwa kula
 Dont add too much chilli pepper

3.Unawasha kwa mbali kama hupendi chakula kinacho washa usiweke pilipili
  Dont add chilli if you dont like too much chilli in your food

FAGI ZA CHOCOLATE(DOUBLE CHOCOLATE FUDGE)


MAHITAJI/INGREDIENTS.
1.Chocolate Nyeusi vipande 20
  20 bars Dark Chocolate

2.Chocolate Nyeupe vipande 18

  18 bars white Chocolate

3.Peanut butter kijiko cha chakula 1

   1 Tbsp Peanut butter

4.Blue band kijiko cha chai 1

  1 Tea spoon Butter




MAANDALIZI/PREPARATIONS.
1.Chukua tray ya pembe nne weka foil likandamize lifate umbo la ndani ya tray huku foil jengine libakie juu uweze kuishika wakati wa kuitoa
 Line rectangular pan with aluminum foil, leaving 1 inch of foil overhanging at 2 opposite sides of pan

2.Chukua siagi(Blue Band)pakaa kwenye foil lako hakikisha inaenea kote ndani ya tray

  Butter the pan make sure you spread all over the foil.

3.Vunja vunja chocolate nyeusi vipande vidogo vidogo na weka kwenye bakuli

  Break the dark chocolate into small pieces and keep them in the bowl

4.Weka Peanut butter kwenye kibakuli chenye chocolate nyeusi

  Add peanut butter in the bowl that contain dark chocolate

JINSI YA KUTAARISHA/HOW TO PREPARE

1.Yeyusha kwenye microwave kama huna naelezea jinsi ya kuyeyusha kwa njia ya kawaida hatua ifuatayo
 Melt the mixture in the microwe till melted otherwise use the next step

2.Chukua sufuria weka maji kidogo kisha juu yake weka bakuli la bati

  Take a pan and add small amount of water and keep metal bowl on top of it

3.Washa jiko moto wa kiasi acha maji yachemke

  Turn the flame let the water boil

4.Weka mchanganyiko wako kwenye bakuli la bati huku ukikoroga mpaka uwe rojo

  Add the mixture in the bowl and steer well till melted

5.Ukiyayuka mimina kwenye tray ueneze kote

  When completely melted pour on the tray and spread it 

6.Yeyusha chocolate nyeupe katika chombo kengine na umimine kwenye mchanganyiko wa mwanzo

  Melt the white chocolate in separate bowl then pour on top of the previous mixture in the tray

7.Chukua kijiko kigeuze,shika kule kwa kulia kisha changanya mchanganyiko wako kupata huo muonekano wa Zebra

  Use spoon handle mix the mixture randomly to get Zebra view

8.Weka kwenye friji kwa masaa 12(Nusu siku) au siku nzima

  Refrigerate for 12 Hours or the whole day

9.Itoe kwenye friji kata kata vipande kwa umbo upendalo

  Remove from the frige,use a knife to cut into any shape you prefer

10.Unaweza kula na kahawa au zenyewe

  You can serve with coffee or as it is

1.Usizidishe kiwango cha peanut butter utaibadilisha rangi,ladha na itakuwa nzito
 Do not add too much peanut butter cause to change the taste,colour and consistency  

2.Ukiyayusha chocolate kwa njia ya kawaida hakikisha haingii maji 

 Make sure the chocolate do not contaminate with water when melted on the stove

3.Ukisha kuikata iliwe yote au iliwe na kuhifadhiwa kwenye friji la sivyo inayayuka

  After you cut them into pieces eat them or if you are not ready take them back to the fridge otherwise will melt

CAKE DOUGHNUTS(DONAS ZA BLUE BAND) ZANZIBAR STYLE


MAHITAJI/INGREDIENTS
1.Siagi robo
  Blue Band 250gm

2.Unga wa Ngano kilo kasorobo

  750gm Plain Flour

3.Sukari ya Unga Kikombe kikubwa 1

   1 Mug Icing Sugar

4.Kungu Manga 2

  2 Nutmeg

5.Yai 1

  1 Egg

6.Maziwa robo lita

  1/4 Litre  Milk

7.Baking Powder kijiko 1

  1 Tbsp Baking Powder

8.Chumvi kiduchu

  Pinch of salt

9.Sukari Kijiko kikubwa 1

  1 Tbsp Sugar

10.Mafuta Lita 1

  1 Litre Sunflower Oil

11.Arki Vanilla kijiko kidogo 1

  1 teaspoon Vanilla

12.Mdalasini kijiko kikubwa 1(Sio Lazima)

  1 Tbsp Cinnamon(Optional)

MAANDALIZI/PREPARATIONS
1.Kwenye bakuli kubwa chekecha unga kisha weka baking powder na chumvi uchanganye vizuri na weka pembeni
    In a large bowl sift flour then combine flour, baking powder, and salt mix well and set aside

2.Twanga kungumanga zichunge kisha weka kwenye mchanganyiko wako

   Grate the nutmeg and add its powder in the flour mixture

3.Weka Siagi na changanya vizuri na unga wako mpaka upate chenga chenga 

Add Blue band in the flour and mix it well by using your hand

5.Vunja yai changanya lipige na uma kisha changanya na sukari na mimina kwenye mchanganyiko wako

 Beat an egg in a small bowl and add sugar then pour it in the flour mixture

6.Changanya vizuri kisha weka Vanilla na endelea kuchanganya kwa dakika 2

  Add Vanilla and keep mixing the mixture for 2 minutes

7.Mimina maziwa kidogo kidogo mpaka upate donge moja kama la unga wa vileja 

  Pour some milk little by little till it becomes in dough

8.Kanda taratibu mpaka upate donge ambalo si laini sana wala gumu sana

  Knead the dough till becomes medium sift like cookies dough

9.Ligawe katika madonge matatu

 Divide into 3 dough

10.Sukuma kama duara la chapati katika upana wa nusu nchi isiwe nene sana wala nyembamba sana

   Roll the dough to 1/2-inch thickness

11.Tumia kifaa cha kukatia donas au glasi mie nimetumia kikombe kikubwa cha chai

  Use a floured 2-1/2-inch doughnut cutter to cut the dough into rings. Dip the cutter into flour between cuts to prevent the dough from sticking to the cutter

JINSI YA KUPIKA/HOW TO COOK

1.Weka karai mafuta yapate moto kiasi kama ya kukaangia samaki weka donas zako usiweke zaidi ya tatu
 In a heavy, deep large saucepan, heat the oil to 365°F,fry the doughnuts, two or three at a time

2.Zikaange kwa dakika 2 mpaka 3 mpaka ziwe za brown

   In the oil fry for 2 to 3 minutes or until they are golden brown, turning once.

3.Zitoe huku ukizichuja mafuta kwa kunyunyizia kwenye sufuria yako

 Remove the doughnuts with the slotted spoon, allowing excess oil to drain back into the fryer or pan

4.Weka kwenye chujio au tissue kiasi cha dakika 10 zikauke mafuta

  Drain the doughnuts on sieve or paper towels let them cool them for 10 minutes.

5.Weka kwenye sahani na mwagia Icing Sugar

  Keep the doughnuts on plate then sprinkle the icing sugar on top

6.Kama utapenda changanya mdalasini na icing sugar halafu zimwagie juu yake

  You may mix the icing sugar and cinnamon powder then sprinkle on top of them

1.Usiweke mayai mengi zitaleta shida kwenye kuzichoma(Kukaanga)
  Dont add too much egg may lead problem during frying them

2.Usizikaange mpaka zikawa nyekundu

  Dont over fry them until turn to red colour

3.Kama huna icing sugar,saga sukari nyeupe kwenye blenda ya vitu vikavu kisha nyunyizia
 If you dont have icing sugar,replace with blended white sugar  

4.Usiwahishe kuzinyunyizia Sukari zitafanya maji hakikisha zimepoa kabisa ndio weka icing yako
  Dont sprinkle the icing sugar till the donus are slightly or completely cool it may cause to melt and get wet

CHAPATI ZA MAZIWA


MAHITAJI/INGREDIENTS

1.Unga wa Ngano 200gm
 200gm of All Purpose flour

2.Hiliki punje 5
5 pieces of cardamon

3.Yai 1
 1 Egg

4.Maziwa kikombe kidogo cha chai 1 na robo
 1 1/4 small cup of Milk

5.Sukari kijiko cha chakula kimoja 1
 1 Tbsp of sugar

6.Mafuta Nusu Kikombe
 1/2 cup of Oil


MAANDALIZI/PREPARATION
1.Chukua bakuli kubwa kiasi chekecha unga weka pembeni
 Sift the flour in a big bowl and keep it a side.

2.Menya hiliki na uzitwange vizuri
 Peel the cardamon pods and minced the seeds 

3.Vunja yai kwenye kibakuli lipige na umma kama unataka kulikaanga weka pembeni
 Take a small bowl and folk then beat an egg and keep it a side

4.Chukua maziwa weka kidogo kidogo kwenye unga huku ukiuchanganya na mchapo au upawa mpaka uwe na uzito kiasi hakikisha hauwi mwepesi sana wala mzito sana
 Pour some milk slowly in a flour and mix it well then whisk the wet mixture and make it neither heavy nor light

5.Weka hiliki ,sukari na yai kisha changanya vizuri mpaka uji wako uchanganyike na vitu vyote
 Add minced cardamon,sugar and bitten egg and keep whisking the mixture till all ingredient well mixed

JINSI YA KUPIKA/HOW TO COOK
1.Weka chuma(frying pan) chako jikoni na mafuta kijiko kimoja yaeneze kwenye chuma chote
 Pour a Tbsp of oil in Non Stick Frying Pan and swirl around so that it lightly coats the surface,let it heated for a minute

2.Tumia upawa chota miko miwili au zaidi inategemea na ukubwa wa chuma chako na ieneze kwenye chuma chote
Use a cooking spoon mix well your wet mixture then take two of them and pour the mixture in a frying pan

3.Ueneze mkate wako kwenye chuma upate duara na unakuwa mwembamba kiasi
  Spread the wet mixture into the pan to get cycle

3.Acha kwa dakika 4 mpaka uone mkate wote umekauka ule umaji maji wa ubichi haupo
  Let cooked for 4 minutes till the upper side become dry

4.Ugeuze upande wa pili uache kwa dakika 3 ukauke
 Carefully lift the edge of the pancake with spatula and flip on the another side and cook again till dried for about 3 minutes

5.Chota mafuta kijiko kimoja weka chini ya mkate wako huku ukiuzungusha mpaka upate yangi ya kuvutia
 Put a Tbsp of oil at bottom of your cooked pancake and use a Tbsp to squeeze it till have golden brown colour

6.Ugeuze kisha utoe weka kwenye kwenye sahani
 Flip over and and remove it from pan to the plate

7.Rudia njia hizi mpaka umalize uji wote
Repeat the above procedure till you finish the whole wet mixture

8.Weka mezani kula na chai ya maziwa,juice au kinywaji chochote
 Serve with tea,milk,juice or any drink

1.Yai muhimu usipoweka mikate inaganda kwenye chuma
 You must put an egg otherwise the pancake will sticky in pan 

2.Kama hutaki rangi ya kahawia usiiache kwa muda mrefu baada ya kuweka mafuta
 If you prefer white colour and not golden brown remove from the pan 1 minutes once you add oil

3.Tumia Nonstick Frying Pan kwa kuhofia kugandisha mikate mara kwa mara
 Use Nonstick Frying pan to avoid sticking of pancakes frequently

4.Ili upate mikate mizuri ya kuvutia hakikisha moto ni wa wastani ukipikia moto mkubwa zinakua mbaya
 Use medium heat to get delicious and attractive pancakes otherwise wont have good taste

KAMBA WA KUKAANGA(FRIED SHRIMPS)


MAHITAJI/INGREDIENTS
1.Kamba kiasi
 Little amount of Shrimps

2.Pilipili Mbuzi iliotwangwa kijiko 1
 1 Tbsp minced Red Chilli

3.Ndimu ilokamuliwa vijiko vikubwa 2
 2 Tbsp Lemon Juice

4.Chumvi kijiko kikubwa 1
 1 Tbsp Salt

5.Kitunguu thomu kilotwangwa kijiko kidogo 1
 1 Tbsp Minced Garlic

6.Chicken Masala(Au masala yoyote) kijiko 1
 1 Tbsp Chicken Masala(Or Any Masala)

7.Mafuta ya kula Nusu lita
 1/2 Litre any Cooking Oil

8.Maji kiasi kwa ajili ya kuoshea kamba
 Any amount of Water for Washing shrimps

MAANDALIZI/PREPARATION
1.Osha kamba vizuri kisha waweke kwenye bakuli kubwa kiasi
 Rinse well shrimps and keep them in big bowl

2.Waweke vitu vyote nilotaja hapo juu kasoro mafuta
 Marinate them by adding all ingredients mentioned above except cooking oil

3.Vaa gloves au jifunge mfuko mkononi wachanganye vizuri mpaka wakolee viungo
 Use a glove to mix them well till get marinated 

4.Kisha waache kwa dakika 5 mpaka 10 waingie viungo vizuri 
 Leave them for 5  or 10 minutes

5.Mimina mafuta kwenye karai
 Pour some oil in a cooking dish or frying pan

JINSI YA KUPIKA/HOW TO COOK
1.Weka mafuta jikoni yapate moto vizuri
 Bring the oil to maximum heat

2.Weka kamba utawaona wanabadilika rangi kuwa ya dhahabu
 Add the shrimps you will see them turn to gold

3.Waache kwa dakika 3 tu kisha wageuze kwa kuwachanganya
Leave them for 3 minutes then turn the shrimps upside down by mixing them

4.Subiri dakika 3 nyengine waepue weka kwenye chujio wachuje mafuta
 Wait for another 3 minutes and remove them from the oil to the sieve or colander to let the shrimps drain

5.Subiri wapoe waweza kula wenyewe au na wali,mkate n.k
 Let them cool and they are ready to serve alone or with cooked rice,breads and so on.

Angalizo:Note
1.Usiwaweke kwenye karai kama mafuta hayajapata moto vizuri
 Do not add them if the oil is not full boiled

2.Pika kwenye mazingira safi wakiingia mafuta ya taa wanabadilika ladha na kuwa na ladha ya mafuta ya taa
 Keep kerosene far away during cooking them cause it changes the taste when contaminated

3.Unaweza kutoa maganda kabla ya kuwapika,wakati wa kuwala au unaweza kula na maganda yake
 You can peel the shrimps before or after cooking or you can serve them without peeling them

CHAI YA MAZIWA(MILK TEA)

MAHITAJI
1.Maziwa Nusu Lita
 1/2 Litre Milk

2.Maji safi nusu Kikombe Kidogo cha Chai
 1/2 Cup Water

3.Sukari Vijiko 3 au 4 kama unapenda sukari
 3(or)4  Tbsp Sugar

4.Hiliki punje 6
 6 Cardamon

5.Tangawizi iloparwa kijiko kidogo cha chai 1
 1 small Tbsp Crushed Ginger

6.Mdalasini mzima vipande 3
 3 pieces Cinnamon

7.Arki Vanilla kijiko kidogo cha chai 1
 1 small Tbsp Vanilla

8.Majani ya chai kijiko kikubwa 1 
 1 Tbsp Tea Leaves

MAANDALIZI/PREPARATION
1.Mimina maziwa kwenye sufuria 
 Pour some milk in a cooking pot

2.Menya na zitwange hiliki zako vizuri mpaka zisagike na maganda weka pembeni
 Peel and crush the cardamon and dont throw away its cardamon pods

JINSI YA KUPIKA
1.Weka maziwa jikoni na vitu vyote nilotaja hapo juu pamoja na maganda ya hiliki kasoro majani
 Boil the milk added those ingredients i mentioned above except tea leaves and add cardamon pods too

2.Wacha yachemke kiasi kabla ya kupanda juu
 Let it boil into medium heat before rising

3.Weka majani ya chai
 Add tea leaves

4.Acha maziwa yaje juu kama yanataka kufoka ndio uyaepue
Let them rise and suddenly remove to the stove

5.Mimina chai kwenye chupa kwa kutumia kichujio
 Strain the tea into Thermos and filter it by small sieve

6.Kisha weka kwenye kikombe na ufurahie chai yako
 Then strain the tea into a cup and enjoy it

7.Unaweza kunywa na kitafunio upendacho kama Mkate,buiscuit,keki n.k
 You can serve with bread,cake,cookies,biuscuit and so on.

1.Usijaze maji mengi chai itakuwa nyepesi
 Dont add too much water the tea will be so light

2.Usiweke majani mengi hupelekea chai kuwa chungu
 Dont add too much tea leaves

3.Kama si mpenzi wa sukari sukari nilotaja hapo juu inatosha kabisa

WALI WA KUKU WA MVUKE



MAHITAJI/INGREDIENTS
1.Mchele wa Basmat Robo(1/4 kg)
 1/4 kg Basmat Rice

2.Mafuta ya kula robo lita
  1/4 litre Cooking Oil

3.Kitunguu maji kikubwa 1
 1 Medium Size Onion

4.Karoti kubwa 1
 1 Large Carrot

5.Pilipili Hoho(Pilipili boga) kubwa 1
 1 Large Green Pepper

6.Chumvi vijiko vikubwa 3
 3 Tbsp Salt

7.Uzile mzima(Binzari Nyembamba) kijiko Kikubwa 1
 1 Tbsp Cumin(cummin) seeds

8.Kitunguu thomu kilosagwa kijiko kikubwa 1
 1 Tbsp Minced Garlic

9.Tangawizi ilosagwa vijiko vikubwa 2
  2 Tbsp Crushed Ginger

10.Juisi ya Ndimu vijiko vikubwa 2
 2 Tbsp Lemon Juice 

11.Viazi Mbatata vidogo 8
 8 Small size Potatoes
12.Chicken Masala vijiko 2

 Water for boiling rice

16.Njegere robo kikombe
1/4 Cup Peas


MAANDALIZI/PREPARATION
1.Osha mchele wako vizuri uweke pembeni
  Rinse the Basmat rice well

2.Katakata kitunguu maji,karoti na pilipili kila kimoja kata kwenye sehemu yake usivichanganye
 Chop the Onion,carrot,green pepper separately dont mix them after chopping 

3.Menya viazi mbatata kisha kata kata kwa umbo la chipsi.
 Peel the Potatoes and cut them in chips shape

4.Kata kata kuku vipande kisha muoshe vizuri
 Cut the chicken into pieces and wash them well

5.Muweke Kuku wako Chumvi kijiko 1,ndimu,tangawizi,kitunguu thomu na chicken masala na muwache kwa robo saa katika friji
Marinate the chicken with salt,lemon juice,ginger,garlic and chicken masala then refrigerate it for at least quarter an hour

6.Chukua kikombe weka maji kiduchu na rangi kiasi
 Put the orange colour and some drops of water in a cup


JINSI YA KUPIKA/HOW TO COOK
1.Chukua sufuria weka maji,chumvi kijiko 1,njegere na uzile yakichemka toa uzile wako wote na kisha weka mchele acha uchemke na uive kisha umwage maji uache bila maji.
Add water,1 tsp of salt and cumin seed in a cooking pot and bring to full boil then remove all cumin seeds and add the rice and let it boil till cooked,strain the rice in sieve or colander.

2.Chukua sufuria weka maji funika na chujio la rice cooker na umpange kuku wako halafu funika na foil mpike kwa dakika 15 .Hakikisha humwagi rojo rojo lilobakia kwenye kuku utakuja kuyatumia baadae
In another pot add some water cover the pot with rice cooker steamer,place the chicken on rice cooker steamer then cover it with foil and the lemon juice remained in the chicken bowl during marination leave it for further uses,let it cooked for 15 minutes while it is on the stove.

3.Baada ya dakika kupita mgeuze kuku na muwache tena kwa dakika 15
 After those minutes turn over the chicken so can be cooked in another side

4.Akiiva mtoe weka pembeni
 When it is ready remove from the steamer to the plate

5.Chukua sufuria nyengine uweke mafuta na kaanga chipsi mpaka ziive kisha zitoe
 In another pot add the Oil and Fry the chips till cooked and keep it a side

6.Ukitoa chipsi anza kukaanga vitunguu maji mpaka viwe brown kiasi kisha vitoe,halafu kaanga keroti na uzitoe na malizia kukaanga pilipili boga na kisha zitoe
 Then fry the onion till brown when ready keep it aside,then fry carrot then remove it and finally fry the green pepper and remove it dont mix them

7.Chukua chombo yatoe yale mafuta yote uliokaangia na bakisha sufuria tupu
 Remove all the cooking oil in a pot

8.Mimina wali uliopika kwenye ile sufuria kidogo kisha juu weka viazi mbatata,kisha ongeza wali kidogo juu ya viazi mbatata kisha weka kuku
In an empty pot make layer of rice with vegetable by starting add cooked rice little then add chips on top of rice than rice again then steamed chicken

9.Endelea kwa kuweka pilipili boga ulilolikaanga kisha mimina wali ,nyunyizia chumvi juu weka vitunguu maji na rudia hivyo hivyo mpaka mwisho juu kabisa weka rangi.
Continue to add fried green peppers than rice on top than spread some salt then fried onion then salt and add the colour on top of rice 

10.Mimina lile rojo rojo la kuku uliloli bakisha kisha ufunike wali wako upate kukauka
 Add the lemon juice remained in the chicken bowl during marination on top of the rice

11.Acha wali ukauke kwa moto mdogo kwa dakika 5 usiukoroge.
 Cover the rice for 5 minutes with medium heat

12.Baada ya huo muda kupita uepue kisha uchanganye na upakue
 After that time passes you can serve it

1.Pangilia vizuri wali kwa kutenganisha na viungo pamoja na kuku
 Make sure you make the layer between rice and chicken with fried vegetables

2.Sio lazima upange kama nilivyo orodhesha hapo juu ila ni muhimu kutenganisha viungo na wali wako
 You can make the layer as you wish not necessary to follow how i did

3.Usiukoroge mpaka wakati wa kuupakua
 Dont mix the rice till when it is ready to serve

4.Unaweza kuweka mbogamboga zaidi
 You can add more vegetables you have

TAMBI ZA NAZI(DRIED CHINESE NOODLE)


MAHITAJI/INGREDIENTS
1.Tambi (robo) mafungu 2
 1/4 kg  Chinese Noodle

2.Tui Nusu Kikombe
 1/2 Cup of Heavy Coconut Milk 

3.Sukari Vijiko 5
 5 Tbsp of Sugar

4.Hiliki 10
 10 cloves of cardamon 

5.Zabibu robo kikombe
 1/4 Cup of Dried Grapes

6.Maji  lita 1
1 litre of Water

7.Arki Vanilla kifuniko 1
 1 Cup of Vanilla

MAANDALIZI/PREPARATIONS
1.Vunja vunja tambi zako weka kwenye sahani.
 Break the pieces of dried chinese egg noodles

2.Twanga hiliki zako.
 Grind the cloves of cardamon

3.Weka maji kwenye sufuria.
  Pour some water in a pot

JINSI YA KUPIKA/HOW TO COOK
1.Teleka maji yaache yapate moto vizuri.
 Heat large pot of water to a full boil.

2.Mimina tambi kwenye maji ya moto acha zilainike kisha mimina kwenye chujio kikauke maji.
 Add the noodle in the hot water until they are flexible then pour them in a seave to get dried

3.Mimina tui kwenye sufuria weka hiliki na sukari acha lichemke.
 Add the coconut milk in a cooking pot with sugar and cardamon and let it boil.

4.Kisha weka arki,zabibu na mimina tambi zako.
 Then add Vanilla,dried grapes and noodles.

5.Changanya tambi zako kwa kutumia mwiko wa wali(Tumia kugeuzia tambi kule kwa kushikia mwiko sio pa kupikia).
 Use a wooden spatula to mix them( use the handle of a spatula to mix the noodle) 

6.Geuza tambi zako mpaka zikaribie kukauka kisha funika acha zikauke.
 Mix them well till they are nearly to get dried and cover them.

7.Zikikauka pakua tayari kula zenyewe au na samaki wengine hupenda kula na mchuzi au maharage.
 When they are completely dry,then are ready to serve you can have them as they are or you can eat them with roast or cooking beans.

1.Usichemshe Tambi sana mpaka zikavurugika
 Don't over boil the noodles

2.Usiweke tambi haraka kabla tui halijachemka zitakuwa zimaji
 Don't add the noodle if the coconut milk are not boiled yet

3.Hakikisha tambi zinakauka vizuri kabla ya kuzipakua
 Let the noodle dried enough before serve them.
