MAANDAZI YA NAZI(MAANDAZI YA MAFUTA) FRIED ANDAZI


MAHITAJI/INGREDIENTS
1.Unga wa ngano nusu
  Plain Purpose Flour 1/2 Kg
 
2.Sukari Kikombe cha Rice Cooker 1(Kijae)
  Sugar 1 Cup of Rice Cooker(Full) 
 
3.Chumvi kiduchu
  A pinch of salt

4.Hiliki punje 10
 10 pieces Cardamon

5.Custard kijiko kimoja cha chakula(Sio lazima)
  1 Tbsp Custard(Optional)

6.Samli kijiko 1 cha chakula
  1 Tbsp Ghee

7.Tui la nazi glasi ndogo 1
  1 Glass Coconut Milk 

8.Hamira vijiko 2 vya chakula
  2 Tbsp Yeast

9.Baking powder kijiko 1 cha chakula(Sio lazima)
  1 Tbsp Baking Powder(Optional)

10.Mafuta ya kupikia lita 1
  1 Litre Cooking Oil

MAANDALIZI/PREPARATIONS
1.Chekecha unga kwa kutumia chungio kwenye chombo utacho kandia unga wako na punguza nusu kikombe cha unga weka pembeni.
    In a big bowl sift flour and remove a half cup of it and set aside


2.Chukua kikombe weka hamira,sukari vijiko 2,unga vijiko 2 na tui vijiko 4 iache kwa dakika 5 mpaka ifure.
  In an empty cup add yeast,2 Tbsp of sugar,2 Tbsp flour and 3 Tbsp coconut milk and let it rise for atleast 5 minutes


3.Chukua unga ulio uweka kwenye chombo chako,weka baking powder na chumvi.
  Add salt and baking powder in the bowl of flour and mix it

4.Twanga hiliki baada ya kuzimenya kisha weka kwenye unga unaotaka kuukanda
 Grind peeled cardamon and add them into the bowl having flour

5.Chukua hamira ilio umuka changanya kwa mkono vizuri na unga wako 
    Add raised ghee into the flour mixture and keep mixing
  

6.Malizia kwa kumimina tui lako kidogo kidogo na uanze kuukanda utakapo kuwa donge moja.
    Finally pour coconut milk little by little into the flour mixture until you get a dough

7.Weka samli unga wako na uendelee kuukanda.
   Add ghee into the dough keep kneading it

8.Kanda unga kwa dakika 10 mpaka uwe mlaini kisha ufunike vizuri au uweke kwenye container na uufunike ili usipitishe hewa uache kwa dakika 15 kwenye sehemu ya joto.
   Knead the dough at least for 10 minutes until soft then cover it for 15 minutes let it rise in double size 

8.Ukiumuka kata madonge na uyasukume kwa kutumia unga mkavu upate duara ila lisiwe nene sana wala jembamba sana,kisha kata maandazi yako kwa shape ya pembe tatu.
 Than cut into medium dough and roll it out to get a circle after sprinkle the flour on to the surface,then cut the circle into four rectangular pieces(andazi) 

7.Yaache maandazi yako yaumuke kwa dakika zisizo pungua 20 mpaka 30.
  Let them rise for atleast 20 to 30 minutes

JINSI YA KUPIKA/HOW TO COOK
1.Weka mafuta kwenye karai yaache yapate moto kiasi kisha weka maandazi yako.
  Heat the oil into the frying pan to the medium heat then add maandazi

2.Hakikisha maandazi hayawi mengi ili yaachane uweze kuyageuza kwa uzuri zaidi.
 Do not add too many of them there must be a space between them in frying pan

3.Ili andazi liumuke wakati wa kukaanga basi fanya kama una limwagia mafuta juu kwa kutumia mwiko(mshebeki,jaro) wako,halafu ndio uligeuze baada ya kuumuka.
  During frying shake your andazi and use the heated oil inside the frying pan add them on top of andazi to let it rise well before flip it to the other side

4.Andazi likiiva epua weka kwenye chujio au tissue kulichuja mafuta.
  When they turn into golden brown remove from the pan to the sieve or tissue

5.Tayari kwa kula na Maharage,mboga,mchuzi,chai au kinywaji chochote     
  Ready to serve with Cooked Beans,Source,Tea or any other drinks

1.Hakikisha unga unaukanda vizuri hadi unakuwa mlaini ili maandazi yawe laini pia
   Make sure the dough is too soft to have soft andazi 

2.Upe mda unga wa kutulia ili ulainike zaidi
  Do not rush into cook let the dough relax to be too soft

3.Hakikisha yanaumuka vizuri kabla ya kuyapika
   Let them rise well enough before baking them 

 4.Ukitaka andazi liwe na nyama ndani usisukume lichapati jembamba wakati wa kukata shape yako na lisiumuke sana.
  If you like thick Andazi roll out the thick circle and do not let your andazi to rise for too long

 5.Na ukitaka lisiwe na nyama ndani sukuma lichapati la wastani wakati wa kukata shape yako na acha liumuke sana.
   If you like thin that have space inside Andazi  make sure your circle is thin too and let them rise for too long

6.Hakikisha mafuta unayopikia hayana harufu yoyote mfano (yasinukie alizeti) na masafi yasiwe yamepikiwa chochote
 The Oil used for frying must be clean i.e never used before and not imparting any flavor or smell.
