SHRIMPS RICE(WALI WA KAMBA)
MAHITAJI/INGREDIENTS
1.Kamba wakubwa kiasi 30
30 Medium size shrimps
2.Mchele Kikombe Kimoja
1 Cup uncooked rice
3.Keroti kubwa 1
1 Carrot
4.Pilipili Boga kubwa 1
1 Medium size Green Pepper
5.Kitunguu kikubwa 1
1 Medium size Onion
6.Ndimu ilokamuliwa kijiko 1
1 Tbsp Lemon juice
7.Pilipili inayowasha 1
1 Red Chilli
8.Kitunguu punje kubwa 1
1 Garlic Clove
9.Chumvi kiasi
Salt to taste
10.Fish Masala kijiko kidogo 1
1 Tea spoon Fish Masala
11.Mafuta robo kikombe
1/4 Sun Flower Oil
12.Tangawizi Ndogo sana
1 small Piece Fresh Ginger
13.Uzile(Binzari Nyembamba) kijiko cha chai 1
1 Cumin seeds Tea spoon
14.Nyanya(Tungule) 1
1 Fresh Tomato
MAANDALIZI/PREPARATION
1.Chukua kamba waoshe vizuri kisha watoe magamba yao yote
Wash well the shrimps and peel them well
2.Menya Kitunguu thomu na tangawizi
Peel the ginger and clove of garlic then wash them
3.Twanga kitunguuu thomu,tangawizi,pilipili na chumvi kwa kutumia mchi na kinu
Grind the mixture of ginger,red chilli,salt and clove of garlic I do use (mortar and pestle)
3.Waweke kwenye bakuli dogo na waunge vizuri kwa kuwaweka viungo ulivyovisaga
Marinate them by adding the mixture you grind in step 2
4.Weka Ndimu,Masala na Uzile kisha wachanganye vizuri
Finally add Masala,Lemon juice and cumin seed then mix them well
5.Chambua mchele na uoshe vizuri weka pembeni
Remove the unwanted particle in rice and wash it well
6. Para keroti kisha kata vipande vikubwa kiasi vya Kitunguu maji
Grate the Carrots and by using sharp knife chop the onion into medium size
7. Toa mbegu za kati za Pilipili hoho kisha ikate vipande kwa urefu
Remove the inner seeds and chop it into little sticks
8.Para nyanya weka pembeni
Grate the tomato and set a side
9.Weka maji kwenye sufuria na chumvi
Add water and salt into pot
JINSI YA KUPIKA/HOW TO COOK
1.Weka maji jikoni yakipata moto pika wali mpaka uive
Bring the water to a full boil and cook the rice until cooked
2.Weka karai na mafuta yakichemka kaanga kitunguu mpaka kiwe brown kiasi
Add the oil into the pan and when heat fry the onion till light brown
3.Weka pillipili hoho kaanga kidogo mpaka zitoe harufu tu usikaange sana kama kitunguu maji
Add the green pepper fry till smell dont over cook like onion
4.Malizia keroti nazo ziache kidogo tu
Add grated carrot and keep frying
5.Weka wale kamba na koroga mpaka wabadilike rangi na kuwa na rangi ya dhahabu
Add marinated shrimps and steer the mixture till the shrimps turn to golden colour
6.Malizia kuweka nyanya na chumvi kidogo sana
Finaly add grated tomato and a pinch of salt
6.Koroga acha kwa dakika 1
Steer the mixture and leave it for 1 minute
7.Mimina wali ulio upika mwanzo kwenye mchanganyiko wa kamba
Add the cooked rice in the shrimps mixture
8.Uchanganye kisha ufunike uache ukauke kwa kiasi cha dakika 5
Mix well and cover it to get dried for 5 minutes
9.Baada ya muda huo pakua unapendeza kuliwa na juice au soda.
When its ready you you can serve with juice or soda

1.Usiweke mafuta mengi wakati wa kukaanda
Do not add too much oil when frying
2.Usiongeze pilipili unaweza kuwasha watoto wakashindwa kula
Dont add too much chilli pepper
3.Unawasha kwa mbali kama hupendi chakula kinacho washa usiweke pilipili
Dont add chilli if you dont like too much chilli in your food
