JINSI YA KUPIKA UGALI
1.Weka maji jikoni acha yapate moto kidogo
2.Mimina uji ulioukoroga pembeni kwenye sufuria yako
3.Koroga hakikisha uji sio mwepesi sana wala mzito sana
4.Acha uchemke mpaka utokote kisha anza kuweka Unga mkavu kidogo kidogo huku ukiukoroga
5.Songa ugali wako kwa dakika 4 kisha acha kidogo utulie
6.Endelea kuusonga tena mpaka uwe mlaini kwa dakika 5
7.Ufunike kidogo kwa dakika moja kisha pakua
8.Weka kwenye sahani au hot pot
9.Kula na Samaki, kachumbari, Maharage, Mchuzi, Nyama 'n.k. 
JINSI YA KUPIKA SAMAKI
Kuna njia mbili: Unaweza kumkaanga au kumchoma
1.Kukaanga weka frying pan au karai jikoni weka mafuta
2.Yakipata moto muweke samaki wako
3.Baada ya dakika 4 mgeuze upande wa pili
4.Muwache aive upande mwengine kisha mtoe
5.Muweke kwenye tissue au chujio achuje mafuta
6.Akipoa tayari kwa kula
7.Hakikisha moto ni wa wastani usiwe mdogo wala mkubwa
8.Usiweke samaki kwenye mafuta mpaka yapate moto kisawa sawa
Ama kwa kumchoma
1.Chukua wavu wa kuchomea samaki au nyama
2.Weka samaki wako mwache kwa dakika 1 kisha mpake mafuta
3.Hakikisha moto ni mdogo kiasi ili asiungue
4.Baada ya dakika 5 mgeuze upande wa pili na mpake tena mafuta
5.Msubiri kwa dakika 5 nyengine kama kaiva mtoe

 NB: 1.Ili ugali uwive hakikisha maji yanachemka vizuri
         2.Jitahidi kuusonga vizuri ili uwe mlaini
         3.Tumia mwiko wa ugali kusongea ugali

KATLESI ZA SAMAKI(FISH CUTLETS)



MAHITAJI/INGREDIENTS
1.Viazi mbatata nusu(Vyenye Ngozi Ya Brown)
 1/2 Kg Potatoes(Russets)

2.Samaki 4(Vibua)
 4 Fish(Razor Bellies fish)

3.Mafuta ya kupikia litre 1
 1 Litre Cooking Oil

4.Mayai 4
 4 Eggs

5.Keroti Kubwa 1
 1 Large Carrots

6.Ndimu 4
 4 Lemon

7.Kitunguu thomu punje kubwa 6
 6 Garlic Cloves

8.Chumvi kiasi
 Salt to taste

9.Tangawizi ndogo 1
 1 Small Ginger

10.Pilipili ya kuwasha 2
 2 Red Chillies

11.Paprika kijiko cha chakula 1
 1 Tbsp Paprika 

12.Unga wa mchele (Unga wa sembe au Bread crumbs)
 Rice Flour or Bread Crumbs

13.Maji
 Water 

14.Royco Paketi 1
 1 Packet Royco 

MAANDALIZI/PREPARATIONS
1.Osha Samaki muweke pembeni
 Wash the fishes well and put them in the cooking pot

2.Menya Viazi na vikate Kate weka pembeni acha na maji
 Peel the potatoes and cut into small pieces wash them,keep the pieces in another cooking pot with water

3.Osha vitu vilobakia
 Wash other ingredients remain

4.Menya Tangawizi na Kitunguu thomu kisha vitwange na pilipili usiweke Chumvi
 Peel the ginger and garlic cloves and mix with chillies then grind them together without salt

5. Vunja Mayai weka kwenye kibakuli na Chumvi kidogo yapige kama unataka kukaanga kisha weka pembeni
 Break the eggs in the bowl add salt then beat them

6. Chukua kibakuli na ukamue Ndimu na maji kidogo na ziweke pembeni
 In another separate bowl squeeze the lemon with little water and keep them aside

7.Para keroti yako weka pembeni
 Grate the carrots keep it aside

JINSI YA KUPIKA/HOW TO COOK
1. Chemsha Samaki wako na Chumvi na Ndimu pamoja na Royco hakikisha haumkaushi anabaki na maji maji
 Add the lemon juice,salt and royco in the pot of fishes and bring it to boil until cooked but leave the fishes with little amount of water

2. Chemsha Viazi mbatata na Chumvi kiasi acha vichemke kisha vikiiva mwaga maji na rudisha jikoni kwa dakika 1 ili viwe vikavu kisha epua
Bring to boil the pot of potatoes add salt and when they are ready drain them and take the pot back to the stove for some seconds let the potatoes dry completely

3. Mtoe Samaki miba chukua nyama yake iweke Pilipili ulioitwanga changanya vizuri kisha weka pembeni
 Remove the bones and pin bones of the boiled fish and take the fillet into the bowl add the chillies mixture and mix it well and keep it aside

4. Chukua mwiko wa ugali au chupa ponda ponda vile Viazi ulivyo vichemsha mpaka vilainike vyote
 Mash the boiled potatoes very well

5. Changanya Samaki,Viazi ulivyo viponda na keroti vizuri
 Mix the mashed potatoes with fish mixture and grated carrots by spatula or hands

6. Chukua donge la Viazi tengeza shape upendayo kisha nyunyizia Unga wa mchele kidogo juu ya katlesi zako
  Take small portion of mashed potatoes mixture then shape into any shape you desire keep into the plate then sprinkle the flour or bread crumbs on top

7. Weka mafuta jikon hakikisha yamekuwa ya moto sana chovya katlesi kwenye Mayai kisha weka kwenye karai
 Pour the oil into frying pan and let it heat to the maximum and insert the cutlets beaten eggs then put it in the frying pan

8. Acha kwa dakika 3 kisha zigeuze acha dakika kadhaa zikiwa na rangi ya dhahabu zitoe
 Leave them for 3 minutes then flip to let the other side to cook evenly when turn into golden brown  remove from the pan

9. Weka kwenye chujio au tissue zichuje mafuta zikipoa tayari kwa kula
 Remove from the pan to the sieve or tissue to get dried

10. Unaweza kula zenyewe au kwa chapati au na urojo
 You can serve with breads,urojo or as they are


Angalizo:Note;
1. Usiharakize kuzipika kabla mafuta hayajapata moto zitapasuka kwenye karai
         Do not hurry to insert them into the oil before is heated enough they will break in the frying pan
   
     2. Kaangia kwa Mayai ya kutosha ili zipendeze
          Use enough beaten eggs to be covered well and have better skin

        3. Usiwe na haraka ya kuzitoa jikoni acha ziive ndio uzigeuze au uzitoe
           Do not flip or remove from the frying pan if  they are not ready

       4.Ukikosa vibua tumia samaki wa vipande hasa nguru
        You can use King Fish instead of Razor Bellies Fish
     
       5.Tumia viazi mbatata vya brown huwa vikavu na rahisi kuviponda ponda
        Use Russets potatoes or Yukon Gold Potatoes since they are can be mashed easily

      6.Kupata ladha tamu na nzuri ya Katlesi ni vizuri kula zikiwa zimepoa
         Let the cutlets cool before you serve them

10.Ute wa mayai 2
11.Kungu manga(sio lazima)
  
MAANDALIZI
1.Chunga unga wako weka kwenye chombo cha kukandia
2.Weka chumvi,maziwa,maganda ya machungwa changanya weka pembeni
3.Chukua mtindi,weka sukari na juice ya chungwa piga piga na umma mpaka uchanganyike vizuri
4.Tia ute wa yai kwenye unga wako changanya na mwiko unga wako vizuri
5.Weka mtindi kwenye unga wako na uchanganye vizuri kisha ukande kwa dakika 5 mpaka ulainike
6.Funika unga wako kwa dakika 10 kisha uweke samli vijiko 3 endelea kuukanda mpaka uwe unavutika kwa dakika 10
7.Kisha funika tena kwenye container kwa muda wa nusu saa 
8.Katakata madonge kulingana na size ya chapati unayoitaka
9.Sukuma madonge yako duara kisha yapake samli kati na sokota na uyapange kwenye bakuli lenye mfuniko na uyaache kwa nusu saa
10.Baada ya hapo utaanza kusukuma duara kwa ajili ya kupika chapati

JINSI YA KUPIKA
1.Yeyusha samli ilobaki changanya na mafuta 
2.Weka kikaangio chako jikoni hakikisha moto ni wa wastani
3.Weka chapati yako mpaka ifanye brown
4.Geuza Chapati yako upande wa pili ikiwa ya brown weka mafuta kijiko kimoja
5.Izungushe chapati yako huku ukiikandamiza na kijiko ili kuilainisha kati mpaka nchani 
6.Toa chapati weka nyengine mpaka umalize chapati zako

8.Weka mafuta jikoni yaache yapate moto

10.Ziache kwa dakika 3 kisha zigeuze
11.Baada ya dakika 2 zitoe ziweke kwenye chujio au tissue

4.Chukua kipario(Grater) para karoti yako
5.Kata pilipili hoho nyembamba nyembamba

1.Chukua chombo chako safia cha kuweka salad yako
2.Anza kupanga Vitunguu maji chini
3.Kisha weka keroti
4.Kisha weka pilipili hoho
5.Kisha weka nyanya
6. Malizia kuweka na Tango
7.Nyunyizia chumvi juu
8.Malizia Kunyunyizia Ndimu ulio ikamua

KABABU ZA NYAMA(MINCED MEAT KEBAB)


MAHITAJI

1.Nyama ya kusaga robo
  1/4kg Minced Meat

2.Kitunguu maji kikubwa 1

   1 Large size Onion 


3.Vitunguu thomu punje kubwa 3

   3  Garlic Cloves 

4.Tangawizi kijiko Cha Chai1(ilotwanga)

   1 Tea spoon minced Ginger 

5.Pilipili ya kuwasha 1(au zaidi kama mpenzi wa pilipili)
   1 Chilli Pepper or more  

6.Ndimu 2
  2 Lemon  

7.Pilipili manga ya unga nusu kijiko cha chakula
    1/2 Tbsp Black Pepper

8.Mdalasini wa unga nusu kijiko cha chakula
   1/2 Tbsp Cinnamon powder

9.Uzile(Binzari nyembamba) ya unga Kijiko Cha Chakula 1

  1 Tbsp Cumin powder    

10.Mayai 3
    3 Eggs  

11.Chumvi kiasi
 Salt to taste

12.Bread crumbs kikombe kidogo kimoja

 1 small Cup Bread crumbs

13.Mafuta ya kupikia nusu lita

 1/2 Litre of Cooking Oil

14.Pilipili hoho(Pilipili bogo) ndogo 1

 1 Green pepper 

15.Karoti ndogo 1(ilioparwa)

 Grated carrots

16.Kebab Masala(sio lazima ila vizuri ukiwa navyo)

 Kebab Masala (Optional)

MAANDALIZI/PREPARATIONS
1.Gawa nyama yako sehemu mbili sawa
  Divide the minced meat into halves

2.Moja weka jikoni tia chumvi,ndimu usiweke maji acha itoe maji yenyewe hadi iwive

 One half put it in the pan then add salt,lemon juice and bring it to boil till dry do not add water

3.Kisha changanya nyama mbichi na iloiva pamoja

 Then mix the fresh minced meat and the cooked one into the bowl

4.Twanga kitunguu thomu,pilipili na chumvi na uviweke kwenye nyama

 Grind garlic cloves,salt and chilli together and then add the mixture in the bowl of meat

5.Changanya nyama yako vizuri weka tangawizi,pilipili manga,mdalasini,uzile na uichanganye vizuri

  Add the ginger,garlic mixture you grind before and the spices mentioned above into the meat and mix them well

6.Menya kitunguu maji,pilipili hoho vikate kate na viweka kwenye nyama

  Peel the onion and green pepper then chop them into slice and add them into the meat mixture

7.Vunja yai moja weka kwenye nyama changanya vizuri mchanganyiko wako
 Crack one egg add in the meat mixture and mix it well till mixed

8.Malizia kuweka Bread crumbs zako changanya mchanganyiko wako na onja chumvi kama haijakolea ongeza kidogo na uchanganye vizuri mchanganyiko wako.

 Add the bread crumbs to the mixture and mix it well then taste if every thing is okay proceed next step

9.Weka Kebab masala kama unayo na uchanganye mchanganyiko wako

 Add the kebab masala into the mixture and keep mixing till mixed

10.Chukua nyama yako tengeneza umbo la maduara madogo madogo mpaka umalize nyama yako.

   Take a small portion of a mixture and shape it into several small balls

11.Andaa kibakuli kingine vunja mayai yako yalobakia weka na chumvi kidogo yachanganye na kijiko au umma na yaweke pembeni 
  Break two eggs remained in a separate bowl,add pinch of salt then beat them with spoon or folk  

JINSI YA KUPIKA/HOW TO COOK
1.Weka mafuta kwenye karai yaache yapate moto sana
   Heat the oil in a pan to a maximum 


2.Chukua maduara yako yachovye kwenye mayai kisha dumbukiza kwenye mafuta
  Soak the round balls into the beaten egg and add into the heated oil

3.Ziache dakika 3 kisha zigeuze na ziwache kidogo

 Leave for 3 minutes and turn into other side  

4.Zikiwa za brown zitoe weka kwenye chujio au tissue zichuje mafuta

 When they turn into golden brown remove them and take into sieve or tissue

5.Weka kwenye sahani inapendeza uweke na chatne wakati wa kula

 When they get dried serve with chatne

6.Unaweza kula kababu zako na Chapati au mkate wowote ule.

 You can serve with bread,chapati,juice or as they are.

Angalizo/Note:
       1.Ili kababu zipendeze hakikisha zinachapuka viungo vizuri
          Marinate the mixture well so as kababu may have good taste

     2.Mayai ya kuchovyea wakati wa kupikia yawe ya kutosha

        Beat the enough egg for soaking the kababu

      3.Mafuta yasipopata moto vizuri kababu zinaweza kupasuka kwenye mafuta

           If you hurry to add the kebabu before the oil get heated well the kebab will break during frying 


      4.Zipike taratibu usizifanyie haraka ili ziive ndani vizuri
         Make sure you don't flip or remove the kababu until they turn into golden color otherwise the inner side will be uncooked   

      5.Usizifanyie haraka kuzigeuza hakikisha zinapiga rangi ya brown ndio uzigeuze

          Don't flip to the other side if they do not turn into golden brown

MAHITAJI

2.Sukari robo(kama sio mpenzi wa sukari usiweke yote)

4.Cocoa kikombe kimoja
5.Zabibu kavu kiasi 
6.Maziwa kikombe kimoja
7.Baking powder kijiko kimoja
8.Mayai 5
9.Arki vanilla kijiko kikubwa kimoja
10.Chumvi kiduchu

MAANDALIZI
1.Chunga unga na uweke chumvi na baking powder
2.Chukua chombo weka Blue band na sukari
3.Saga mchanganyiko wako kama una mashine ya kusagia keki(hand mixer au stand mixer)kwa dakika 5 au dakika kumi kwa kutumia mwiko
4.Chukua bakuli vunja mayai na uyaweke kwenye mchanganyiko wako
5.Endelea kusaga mpaka kwa dakika 5 kisha weka arki yako.
6.Weka maziwa na usage tena kwa dakika 5
7.Chukua unga anza kuweka kidogo kidogo mpaka upate uji uji mzito kiasi
8.Weka zabibu kisha ugawe mchanganyiko wako sehemu mbili sawa sawa
9.Sehemu moja weka cocoa nyengine iache vile vile
10.Changanya vizuri ule mchanganyiko uliouweka cocoa.
11.Chukua tray au chombo cha kupikia weka Blue band au karatasi ya kupikia ndani
12.Kisha chota mchanganyiko wa cocoa kijiko kimoja weka kati kati ndani ya chombo cha kupikia ikifuatiwa na mchanganyiko mweupe.Au unaweza kuanza mweupe ukafatiwa na wa cocoa.
13.Rudia njia hio mpaka umalize mchanganyiko wako.

JINSI YA KUPIKA
1.Washa oven yako moto wa wastani kati ya 120' au 150'(inategemea na jiko lako)
2.Weka keki yako na iache kwa dakika 10
3.Endelea kuiangalia mpaka itakapo iva
4.Kuangalia kama imeiva ndani chukua kijiti kisafi chomeka sehemu tofauti kwenye keki yako kikitoka kikavu basi imeiva ndani na kikiwa kibichi keki haijaiva endelea kuipika.
5.Ikiiva kata kata keki yako tayari kula kwa Juice,Chai,Maziwa,Maji.

 NB: Keki ni upishi unaotakiwa kuangaliwa mara kwa mara ili isije kuungua kwa hio kua makini wakati wa kuipika.

 1 Green Pepper

 Some Water 

-CHATNE
1.Nazi ndogo 1
 1 Fresh Coconut

2.Pilipili 1
 1 Chilli

3.Ndimu 1
 1 Lemon

4.Karoti ilokatwa 1
 1 Chopped  Carrot

5.Pilipili boga(Pilipilihoho) lilokatwa 1
  1 Chopped Green Pepper

MAANDALIZI/PREPARATIONS:
BADIA:

1.Weka kunde kwenye ungo kisha zipete kuondoa uchafu
 Take Black Eyed peas in a big plate and remove all unwanted particle

2.Loweka kunde zako kwa zaidi ya masaa 3
  Then soak them into bowl for more than 3 hours


3.Kisha mwaga maji yote weka mengine
 Then pour down the water used to soak the peas and add another water for washing them

4.Anza kuzisafisha kunde zako mpaka zitoke maganda na vimawe vyote mpaka visafike
 After that wash them to remove skin and dirty particles and stones until they are well cleaned

5.Menya Kitunguu Maji,Kitunguu Thomu Na Pilipili Boga
 Peel The Onion,Green Pepper And Garlic Cloves

6.Kata vitunguu maji,pilipili boga,kitunguu thomu na kotmiri
 Chopped Onion,Green Pepper,cloves of garlic,coriander and add into black peas

7.Saga kwenye blenda kunde zako kisha weka chumvi na uzichanganye.
 Add into food processor and blend them

8.Mimina Mchanganyiko wako weka kwenye bakuli
 After blend add the mixture into bowl

9.Weka chumvi na uchanganye vizuri
   Add salt and mix well

JINSI YA KUPIKA/HOW TO COOK
1.Weka mafuta kwenye karai hakikisha yanapata moto kiasi
 Pour oil into pan heat to the medium

2.Anza kuchoma bagia kwa umbo upendalo.
 Deep frying the badia to any shape you prefer

3.Zikibadilika kuwa nyekundu geuza upande wa pili
 Flipping the badia if the lower side turn into red

4.Ziache ziive upande wa pili vizuri
 Let the other side cook evenly

5.Zitoe na uziweke kwenye chujio au tissue zichuje mafuta
 Take them out when they are ready add them into the sieve or tissue

6.Zikipoa kula na chatne
 Let them cool serve with chatne

JINSI YA KUTENGENEZA CHATNE/HOW TO MAKE CHATNE

1.Kuna nazi kwenye bakuli
 Grate the fresh coconut and add into bowl

2.Weka chumvi,karoti,pilipili hoho na pilipili kwenye bakuli la nazi
 Then add salt,carrot,green pepper and chilli into bowl having grated coconut meat

3.Weka mchanganyiko wako kwenye blenda na ukamulie ndimu
 Add the mixture into the jug and add the lemon juice

4.Weka maji kiasi 
 Add little water into the jug

5.Saga chatne yako mpaka iwe laini na nzito
 Blend the mixture till soft and heavy

6.Chatne ipo tayari kula na Bagia,Katlesi.Kababu,Urojo,Chipsi za muhogo n.k.
 Chatne is ready to serve with Badia,Keba,Cutlets etc.

Angalizo:Note
1.Unaweza kuweka Baking powder ukipenda kwenye kunde zako wakati wa kuzipika
 You can add baking powder if you want when you want to fry them

2.Usiweke maji mengi kwenye chatne hakikisha inakuwa nzito nzito
 Don't add too much water into the chatne

3.Vizuri utumie food processor kwa sababu utasaga bila ya kuweka maji 
 Better to use food processor because you can blend the black eyed peas without adding some water

4.Ukisaga kwenye blenda weka maji kidogo kidogo mpaka zisagike
 If you blend Black eyed peas add little water till blended

5.Ukisaga kwa food processor unaweza kuweka maji kiduchu sana ukipenda
 If you blend them in food processor you can add little water if you prefer into the black eyed peas mixture

MAANDAZI YA NAZI(MAANDAZI YA MAFUTA) FRIED ANDAZI


MAHITAJI/INGREDIENTS
1.Unga wa ngano nusu
  Plain Purpose Flour 1/2 Kg
 
2.Sukari Kikombe cha Rice Cooker 1(Kijae)
  Sugar 1 Cup of Rice Cooker(Full) 
 
3.Chumvi kiduchu
  A pinch of salt

4.Hiliki punje 10
 10 pieces Cardamon

5.Custard kijiko kimoja cha chakula(Sio lazima)
  1 Tbsp Custard(Optional)

6.Samli kijiko 1 cha chakula
  1 Tbsp Ghee

7.Tui la nazi glasi ndogo 1
  1 Glass Coconut Milk 

8.Hamira vijiko 2 vya chakula
  2 Tbsp Yeast

9.Baking powder kijiko 1 cha chakula(Sio lazima)
  1 Tbsp Baking Powder(Optional)

10.Mafuta ya kupikia lita 1
  1 Litre Cooking Oil

MAANDALIZI/PREPARATIONS
1.Chekecha unga kwa kutumia chungio kwenye chombo utacho kandia unga wako na punguza nusu kikombe cha unga weka pembeni.
    In a big bowl sift flour and remove a half cup of it and set aside


2.Chukua kikombe weka hamira,sukari vijiko 2,unga vijiko 2 na tui vijiko 4 iache kwa dakika 5 mpaka ifure.
  In an empty cup add yeast,2 Tbsp of sugar,2 Tbsp flour and 3 Tbsp coconut milk and let it rise for atleast 5 minutes


3.Chukua unga ulio uweka kwenye chombo chako,weka baking powder na chumvi.
  Add salt and baking powder in the bowl of flour and mix it

4.Twanga hiliki baada ya kuzimenya kisha weka kwenye unga unaotaka kuukanda
 Grind peeled cardamon and add them into the bowl having flour

5.Chukua hamira ilio umuka changanya kwa mkono vizuri na unga wako 
    Add raised ghee into the flour mixture and keep mixing
  

6.Malizia kwa kumimina tui lako kidogo kidogo na uanze kuukanda utakapo kuwa donge moja.
    Finally pour coconut milk little by little into the flour mixture until you get a dough

7.Weka samli unga wako na uendelee kuukanda.
   Add ghee into the dough keep kneading it

8.Kanda unga kwa dakika 10 mpaka uwe mlaini kisha ufunike vizuri au uweke kwenye container na uufunike ili usipitishe hewa uache kwa dakika 15 kwenye sehemu ya joto.
   Knead the dough at least for 10 minutes until soft then cover it for 15 minutes let it rise in double size 

8.Ukiumuka kata madonge na uyasukume kwa kutumia unga mkavu upate duara ila lisiwe nene sana wala jembamba sana,kisha kata maandazi yako kwa shape ya pembe tatu.
 Than cut into medium dough and roll it out to get a circle after sprinkle the flour on to the surface,then cut the circle into four rectangular pieces(andazi) 

7.Yaache maandazi yako yaumuke kwa dakika zisizo pungua 20 mpaka 30.
  Let them rise for atleast 20 to 30 minutes

JINSI YA KUPIKA/HOW TO COOK
1.Weka mafuta kwenye karai yaache yapate moto kiasi kisha weka maandazi yako.
  Heat the oil into the frying pan to the medium heat then add maandazi

2.Hakikisha maandazi hayawi mengi ili yaachane uweze kuyageuza kwa uzuri zaidi.
 Do not add too many of them there must be a space between them in frying pan

3.Ili andazi liumuke wakati wa kukaanga basi fanya kama una limwagia mafuta juu kwa kutumia mwiko(mshebeki,jaro) wako,halafu ndio uligeuze baada ya kuumuka.
  During frying shake your andazi and use the heated oil inside the frying pan add them on top of andazi to let it rise well before flip it to the other side

4.Andazi likiiva epua weka kwenye chujio au tissue kulichuja mafuta.
  When they turn into golden brown remove from the pan to the sieve or tissue

5.Tayari kwa kula na Maharage,mboga,mchuzi,chai au kinywaji chochote     
  Ready to serve with Cooked Beans,Source,Tea or any other drinks

1.Hakikisha unga unaukanda vizuri hadi unakuwa mlaini ili maandazi yawe laini pia
   Make sure the dough is too soft to have soft andazi 

2.Upe mda unga wa kutulia ili ulainike zaidi
  Do not rush into cook let the dough relax to be too soft

3.Hakikisha yanaumuka vizuri kabla ya kuyapika
   Let them rise well enough before baking them 

 4.Ukitaka andazi liwe na nyama ndani usisukume lichapati jembamba wakati wa kukata shape yako na lisiumuke sana.
  If you like thick Andazi roll out the thick circle and do not let your andazi to rise for too long

 5.Na ukitaka lisiwe na nyama ndani sukuma lichapati la wastani wakati wa kukata shape yako na acha liumuke sana.
   If you like thin that have space inside Andazi  make sure your circle is thin too and let them rise for too long

6.Hakikisha mafuta unayopikia hayana harufu yoyote mfano (yasinukie alizeti) na masafi yasiwe yamepikiwa chochote
 The Oil used for frying must be clean i.e never used before and not imparting any flavor or smell.

MAANDALIZI
1. Menya vitunguu saumu na tangawizi na uvitwange pamoja.
2. Katakata kuku vipande vidogo kisha ukamulie ndimu na kupaka mchanganyiko wa tangawizi na vitunguu saumu (kiasi tu).
3. Katakata vitunguu maji na pilipili hoho uweke pembeni.
4. Grind (Kwangua) kwenye grater nyanya na karoti pia uweke pembeni.
5.Katakata kotmiri vipande vidogo uweke pembeni.
6. Andaa kikaango na jiko.


JINSI YA KUPIKA1. Bandika kikaango jikoni na mafuta kiasi, yakishachemka weka vitunguu maji na kaanga hadi vimelainika na kuiva (hakikisha haviungui).
2. Weka pilipili hoho na karoti na endelea kukoroga hadi vyote viive na kulainika.
3. Sasa weka vipande vya nyama koroga na funikia kwa dakika 3, kisha weka nyanya zako ulizo grind weka chumvi na koroga ili zichanganyike vizuri, vikishachanganyika weka kotmiri na pilipili kama utapenda. Acha vichemke kwa dakika 5. Hakikisha moto sio mkali sana.
4. Angalia kama nyama zimeiva vizuri kisha epua mchuzi wako.
5. Pakua kwenye bakuli na katakata kotmiri uweke kwa juu.
Unaweza kula kwa ugali, wali, ndizi rost au chipsi.

Saladi ya Matunda

Matunda ni mojawapo wa kundi la vyakula, ni muhimu sana kwa afya bora. Matunda yakitengenezwa vizuri yanavutia sana na yanakuwa ni chakula kizuri sana.

1. Ondoa maganda kwenye embe, nanasi, tango, papai na tikiti maji kisha kata kata vipande vidogo vidogo vya mraba

2. Changanya vipande vya matunda kwenye bakuli safikisha weka na zabibu zilizotolewa kwenye kikonyo chake.

3. Weka kwenye friji yapate ubaridi kidogo

4. Saladi yako tayari kwa kuliwa

Waweza kula saladi hii kama mlo wa kati au kama mlo kamili wa usiku.
